Very tasty. I made a few adjustments. Like instead of the soy flour, we used Flax Seed Flour (Meal it is really fine and worked wonderfully. Also, used Vadalia Onions and sliced in about 1.5 to 2 inch slices. Yummy good! (just so you know, there are all sorts of nut flours at the health food store and of course they are all low carb to no carb!

Onion rings and fried zucchini are my favorite fried foods. I was so excited to find a low carb recipe for them and truly wanted to like it. The zucchini turned out better than the onion rings, but unfortunately, neither was great. Maybe it was the flavor of the soy flour, but the taste was not pleasant, and you had to eat them straight out of the oil. If they cooled off at all, they got worse. I may try again and swap out the soy flour for flax seed meal to see if that improves it.

You really have to dredge these in the egg and back into the flour mix for the batter to stick. The batter fluffs up nicely and the taste was great, almost like conventional batter. I also put this batter on mozz string cheese sticks cut in half and they were great. I was able to fing low carb Ketchup in my grocery store to eat with rings- yeah.

My husband is low-carbing, so I've been trying new recipes almost daily. Though I would like a little more salt in the batter (easy enough, this recipe is great! It's a very light breading and fairly easy to do.

I did these tonight with the low carb southern fried chicken and it was VERY good! The onion rings were delicious and the recipe is very easy. I highly recommend trying this recipe...it is sure to become a family favorite!

I made these once and everyone cleaned them up. It was a little messy, so I would classify the difficulty greater than "easy" just because it's a bit of a clean up job.
