    I was skeptical about using Soy flour since all my trials with it have been disappointing due to its bitter taste and tendency to burn easily. This one is a keeper. I didn't even tell the wife and kids that the breading was low carb. They loved it. One thing is that the onions I choose were a bit large and 3 onions made enough rings for a army. You need to eat these rings within 15 to 20 minutes of deep frying due to the soy absorbing the moisture from the onion makes the coating soggy after a while.

    My husband and I were very skeptical to say the least, and boy were we wrong!!!!!! We made the onion rings last night and enjoyed them so much that we had to try it on zuchinni, yellow squash and fish tonight. Can you even begin to know how wonderful it was to have fish and "chips" again? This will be a staple on our weekly menu. I have been having trouble sticking with the program but am going to enjoy getting back on the wagon with recipes like this.

    I saw these on today's show. I happened to have all the ingredients here and so sliced up half an onion and made ONION RINGS!

    I didn't have a thermometer, so I'm not sure I got my oil hot enough. The first batch came out a bit...eh. But my second batch, was terrific!
