My husband's boss and wife were coming over for dinner and they are both doing the low carb diets. This at first was a challage for me...a carb-lovin' fool, but everything worked out wonderfully. And the cheesecake was a great end to a tasty, low carb meal. The cheesecake went way beyond my expectations. It was wonderful. It tasted just like a true New York Cheesecake. I did add a very thin pecan crust (chopped pecans, splenda, cinnamon, and melted butter. It really just added a little something special, but this cheesecake can stand alone. The ricotta in the food processor really helped with the texture. I will continue to use this recipe eventhough it's low carb.

I've gone low carb with some degree of success, but it has required me to attempt to learn to cook for myself instead of eating out. After some success with some of George's easier recipes, I decided to throw down the gauntlet and try this one. It is rated as medium difficulty. While I whined a lot during the preparation and cooking, when the finished product was sampled from the fridge, it was so delicious that I considered changing my career options. This cheesecake can put any 5-star restaurant's cheesecake to shame. Now, it did require more perseverance than I'm used to putting into food preparation. I had to buy a springloaded (? pan. And I didn't let the cream cheese soften up enough initially, but that was my own darn fault because the recipe did say to use softened cream cheese. But then again, I think all cream cheese is soft, how was I to know? And since I have a hand-held immersion mixer, not the regular electric mixer, working with the not-softened-enough cream cheese was even more difficult. Oh well, live and learn! Next time I'll know to set out the cream cheese earlier to allow it to soften up. Accustomed to fast food, I was also challenged by the length of time needed to complete the recipe. I'll not cook this again on an empty stomach because it is going nowhere fast. But perseverance pays off, because this little gem is delicious! I cannot believe it came out of my own kitchen! Thanks George!

Great Cheesecake! Even those not on a diet or low carb watching, wanted this desert, and later on the recipe. George Stella, is a god send.

The recipe was simple and tasted wonderful. We added 'no sugar added' cherry pie filling to it and it made it even better. I will fix one of these every week!!!

low carb or not, this cheesecake is the most delicious I've had in a LONG time! I shared it with 5 other people and all of them said, without prodding, 'this is the best cheesecake ever! Very very good, can't wait to try George's other recipes!

I have been serching for a long time to find a really good New York Style cheese cake receipe, on Thanksgiving my daughter brought this cheese cake to dinner. It was fabulous!!!! Finaly a great (and low carb, I've lost 65 lbs so far cheese cake that is New York Authentic. THANKS SO VERY MUCH!!!

I made this Cheesecake for my mom and dad for Thanksgiving as they are on a low carb diet. This was truly a wonderful tasty cheesecake! We drizzled a little blueberry sauce with Splenda over it and it was Heavenly! Follow the recipe and directions to a "T" and it will turn out great! Thanks Mr. Stella.

While everyone at my Thanksgiving table was eating pumpkin pie and whatnot, I was enjoying this amazing cheesecake. You can't tell the difference from a regular cheesecake! Who knew you could eat like this and still lose weight (which I did..lost 2lbs. over Thanksgiving!!! George..you're amazing!! Everyone..this is a MUST try!
