I love straciatella. I tried this recipe but with a twist: My boyfriend wanted to add some small pieces of fresh chicken to the broth and we did. When the soup was ready, I turned off the heat and added spinach leaves on top right before serving to soften them a little. I served the straciatella with the spinach leaves on top and grated some fresh parmesan cheese and top of the leaves. (This is how they serve it in an Italian restaurant I love. The outcome was wonderful: light, tasty and comforting. It is certainly one of our favorite soups!

Made this soup for the first time. It was very good. But, since my wife and I are on diets, I tried it with EGG WHITES. Just as good (my opinion if not better. Give it a try. I think you will LOVE IT!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Great soup to make with what you have on hand. Also a great way to fit more eggs into your diet. Will make this a staple in my diet.

Recipe looks great. However, on the show he used 6 eggs to 6 cups of chicken stock. The way the recipe is written is 3 eggs to 6 cups chicken stock which I think is a mistake.

This is a good side kick for a jazzed up grilled cheese sandwuch or on a nice chilly day with crackers.
