    Just made these for my meat and potato loving family...knew I would probably love them but had no idea how much like mashed potatoes they really are! Can't believe I haven't tried this before...family loves them! And I can eat them without feeling the least bit guilty!! Thank you for this wonderful recipe!!

    I, honestly, am not a fan of cauliflower, BUT this recipe is fantastic!!! On a low carb diet it seems hard to find side dishes that are not HUGELY loaded with carbs and that my step daughter will like. This is a perfect match and is super easy to make. Thank you!!!

    Delicious!. Since we started our low carb diet I had been missing potatoes...now now! They were delicious; we ate the whole bowl! Thanks! Oh, faster to make than mashed potatoes!

    This is SO good. I really only like raw cauliflower until this!! We LOVED it. My husband thought I just added a little cauliflower to the potatoes. This is a keeper!!

    I followed the advice of one reviewer and quickly blotted the cooked cauliflower until the florets were really dry. I think this made all the difference with the texture. It turned out as creamy as my mashed potatoes. Because I don't eat dairy, I added a small stream of EVOO as I was pulsing the mash instead of the two cheeses. I love garlic, so I doubled up on that and also added 2 tablespoons of fresh lemon juice to thin the mash a bit and brighten the dish. I ate half the mashed head at one sitting and plan to eat the rest later! Delish and great for us Paleo dieters.

    I've been making these for years and my adult children ask for it during the holidays, over regular mashed potatoes. They feel less guilty eating them and they miss nothing after adding gravy. LOL One thing I always do, is add a couple of tablespoons of potatoe buds to thicken the consistancy. Less carbs than regular potatoes...we LOVE them.

    Less time consuming to make, and healthier than regular mashed potatoes. I wouldn't necessarily substitute these for real mashed potatoes and cover them in gravy on Thanksgiving Day, but these are still definitely a tasty way to eat your veggies!
