Great recipe. I made this yesterday then left the house telling my mother in law, "I made fake mashed potatoes, help yourself." I came back that night and it turns out my husband and mother-in -law thought it was mashed potatoes from a box! lol. They had no clue it was cauliflower! It was delcious and sat better in my stomach then actual potatoes.

Simply the best substitute I have ever had. No more mashed potatoes for me. I look at carbs injested instead of calories. This is truly a no guilt pleasure that I can eat all the time. The person who came up with this idea has to be a food genius lol :-
I didn't use measurements and I used the frozen cauliflower that comes in a bag ($1.00 at kroger. I put it in a smoothie blender, but it didn't move so I added a little water which made it a little too creamy so I made another bag of it and mixed it with the creamy batch. Yummy yummy yummy for my tummy tummy tummy.
    Thankyou Food Genius Genie :-

Made these because my wife is on the Atkins diet again. Expected them to be very "cauliflower" tasting but they weren't. Perhaps because they're boiled? My picky eater daughter, who loves potatoes in just about any form, was impressed. If anybody could tell the difference it would have been her. Followed the recipe per ingredients but didn't pat the cauliflower dry so they ended up a little runny but I threw them in the oven at 350 for about 15 minutes while I finished the other components of dinner and they came out great - maybe even better. I'll definitely be making this again.

Amazing! We would add more garlic than the recipe requires, but overall these were very comparable to real mashed potatoes. We were pleasantly surprised!
