    I just ate an entire head of cauliflower! I started a low carb diet about a week ago and this may just be the recipe to help me stick with it! Thank you so much George Stella! Please keep coming up with these!

    Fabulous substitute for mashed potatoes! Made recipe as written except added more salt when cooking the califlower and also added about 1/3 cup of fat-free buttermilk when mashing. Put everything in a mixing bow, cooked califlower (heavily salted and drained. Mashed all ingredients with hand mixer. A figure friendly alternative to carb-loaded potatoes. Made a generous bowl but used a fairly large head of califlower. Thanks!!!

    Made this for subsitution for Mashed Potatoes for Thanksgiving today. Both me and my husband loved it. He rated it a 10! I enjoyed it very much. Great for those on Atkins™ like myself. Only thing is the small amount it made. Next time I will buy 2 heads of Cauliflower. Otherwise, awesome! Thanks for the wonderful recipe!

    Awesome - my totally carb-addicted family didn't know they weren't potatoes. The trick is to get the cauliflower super dry so it has a starch-like texture.

    I've been on the lookout for veggies that the kids will eat. This was a homerun. And my wife can't stand cauliflower but has learned to "try" everything I cook since I've changed her on so many foods. She loves it too! Thanks for a great recipe. I made it as is.

    I like the recipe very much. I did not add the butter and used fat free cream cheese to save calories. I'll make it again and serve it to my family

    Made these tonight along side turkey *****. They were absolutely wonderful. It was my first time working with fresh cauliflower. I added a tad more salt but not much. I didnt have the chicken bouillon. Really great, Ill be making this a lot I can tell!

    This was really delicious and easy!! Didn't quite fool the kids into thinking it was mashed potatoes, but they did eat it. I even made it with purple cauliflower for something a little "different." Looked odd, but still really good!

    I absolutely love this recipe. I look forward to Autumn when there is an abundance of cauliflower availalbe. I crush and slice the garlic with the cauliflower and cook together. I also add fresh chives or thyme when on hand. I've "mashed" the cauliflower by hand and in the processor and prefer the processor. To make ahead, I make the recipe as is then put it in a shallow baking dish, sprinkle with bread crumbs and bake for a short time before serving. LOVE IT!
