    This recipe is a healthy substitute for "starchy potatoes" particularly for those who have type II diabetes. However, the nutritional value of the cauliflower can be enhanced by steaming instead. Using this method eliminate the need to dry the cauliflower before mashing. Also try adding another vegetable, such as peas, or asparagus, after mashing the cauliflower. My Mom 90 YO with diabetes loves this recipe.

    I made this as a side to chicken piccata and it was great with the lemony sauce. However, calling it mock mashed potatoes is a stretch--this definitely tastes and feels like mashed cauliflower. It is a nice alternative if you're trying to minimize carbs, but I do still miss potatoes. I didn't have any cream cheese, so I subbed low fat plain yogurt--worked great and cut out some fat.

    I made these last night and they were soooo good!. Great texture. This was the 1st time making "mock mashed potatoes" with cauliflower. I was making a low fat shephards pie, and wanted to do low carb also. So I used this instead. I did use 2 heads of cauliflower and added alittle more cream cheese. My using more veggies and groung turkey breast this "comfort food" is how a healthy food too!

    We love these potatoes. Since we made them we have them every 3/4 days. We are on a low carb diet, and bescuse of this recipe we do not miss regular mashed potatoes. Thanks.

    This recipe is easy but yet flavorful! I use it as a side dish and in place of potatoes ontop of my shepherds pie to eliminate the carbs.

    I made this recipe almost exactly as written. The only thing I did differently and would recommend to anyone, is as the cauliflower was boiling I melted the butter in a small sauce pan over low heat with the minced up garlic to take the edge of the garlic, rather than just blending it in raw. Oh, and I also used a vegan no MSG boullion cube in the water I boiled the cauliflower in. My mom and my husband loved this recipe. It will be a new menu staple for sure. Thanks George!

    I am a TOTAL meat and potatoes guy. I think I like these better than potatoes. 1 they are healthy ..I subsitute some prepared horseradish for the butter to make them even more so. 2they reheat perfectly without all that starch of potatoes. 3 clean up is a breeze due to no starch. 4 SO simple to make. Hint, do NOT omit the chives. Also, I thin with some chicken stock if its too thick. No one will believe how good these are, and with the horseradish, they may just think they are potatoes!

    George nailed it! You have to try this recipe! It's fast and easy. Mashed potatoes are one of my favorite foods, and I am very picky about the taste. This recipe surpasses my ideal of what great mashed potatoes should taste like. I love it, and is now one of my favorite dishes, along with his recipe for mock potato salad. I didn't even care for potato salad, but my mother made it, and it is now also one of my favorites. It's like something you would get at a fancy restaurant. Keep them coming, George!
