    I've tried several mashed cauliflower recipes and this one is by far the best. Be sure to dry the cauliflower as much as possible, as described. I used a clean cotton kitchen towel. Enjoy!

    This dish is delicious and super easy! I added ricotta instead of parmesan (just because I didn't have any and it was super! I also mixed the butter and the softened cream cheese together while the cauliflower was boiling and added the mixture as I pureed the boiled cauliflower so it didn't get too mushy. All in all a great recipe that is an awesome stand in for my mashed potato craving while on the Atkins diet!

    Ok, let me first say YUMMY!!! Next, I am by no means, at all, never have been a cauliflower fan. However, I LOVED my potatoes. Now I'm on the Atkins diet and can not have potatoes. My family are huge "meat & potatoes" eaters when it comes to dinner so it was near torture making them mashed potatoes while I ate salad. This is my new addiction. They were fantastic warm. I didn't care for them as much as they cooled down, but I was a bit slow making it, since was my first time, and it did cool down a bit before serving. My boyfriend loved it and my 10yo didn't even give it a second thought and ate it right up. This will DEFINITELY be on my menu.. a lot! Thank you so much for posting.

    I think much of getting this recipe to work depends upon how large the cauliflower you use is -- I followed the recipe and thought the end product was bland, so, I got into a cycle of adding a little more. . . garlic, parmesan, salt and cream cheese [and more mixing]-- problem is that by the time I got the dish to where I thought it tasted ["good" at best], the texture reminded me of Cream of Wheat. I may try this recipe again, I love cauliflower it's just finding something different to do with it that's challenging. But, definitely worth trying at least once!

    What doesn't cauliflower go well with? Just about nothing, for it goes well with nearly everthing. I did this recipe, except I skipped the boiling. I just put some water in my rice cooker, put the cauliflower in the basket and let it steam. Then put it in the bowl and added other ingredients! Pretty good, and yes, a great potato substitute. When trying to stave off sugar on an anti candida diet, I had trouble with not eating as many carb or grains - which have wheat gluten. Even gluten free has some contamination, even oatmeals. Anyhow, cauliflower is a life saver because its dense, tastes similar to a potato but also kind of like a mustard green, has almost the same nutritional value as broccoli and goes great with anything or by itself.

    OMG so good! My hubby does not like cauliflower but I thought I would give this a try and see if I could fool him. I followed someone's lead and added half a potato to the cooking cauliflower.
    I dried it thoroughly and while processing the vegetable I added a teaspoon of instant flakes...(this way I didnt feel so guilty that I was tricking him. The result? HE COULD NOT TELL THESE WERE NOT MASHED POTATOES!! My 16 year old son thought they were great too!
    This low carb alternative will be a staple in my house. And did I mention how easy they were to make?

    One word.... A.M.A.Z.I.N.G.!!!! Loved this so much!!! I'm trying to she'd 15 pounds that I gained from quitting smoking a year ago and recipes like this makes it so easy!!! Now I need to find "moch" pasta... I will make this often

    A dish that even non-cauliflower eaters will like. It's tasty, flexible, easy to prepare, and ready in no time. I substituted some chicken stock and salt for chicken base. I'm sure you could add other herbs to change the flavor. We'll definitely have this again.
