    I just made these last night with grilled swordfish. My husband didn't even realize they weren't "real" mashed potatoes until I told him "your eating cauliflower." This recipe is a keeper!

    I can't believe it! My husband and I don't even like cauliflower and this recipe is delicious. I don't have a food processer, so I had to used the blender to mix and I added about a half cup of sour cream. Be sure to serve HOT because it's not as tasty once it cools off.

    This recipe is the best version of "Mock" Mashed Potatoes available anywhere. Instead of just putting pats of butter on top, I just added it to the cauliflower at the end. Mmm Good!

    Even my husband who would raise loud complaints if I ever cooked cauliflower loves this recipe. He did not realize he was eating cauliflower the first time.

    This was so delicious. I thought it tasted better than regular mashed potatoes! So much flavor and you don't even feel guilty about having a second helping!!!! I have been on a low carb diet and missed potatoes.. This is for sure a keeper!!!
