My daughter's fiance is a trained chef. They are both on low carb, getting some pounds off before the wedding. He loves potatoes and was reluctant to try these. Now he makes them all the time. Personally, I prefer them to the real thing. Much more flavor. Our local Italian restaurant offers them on their menu, but they aren't half as good as this recipe. Give it a try!

They were wonderful. Made this for our Easter dinner and there were NO leftovers! Next time for a big dinner, I will make a double batch. One head of cauliflower will feed about 7-8. Thanks for the great recipes. I am going to make this OFTEN!!

Hi- initially I took my time deciding about this receipe since cauliflour is not a favorite in our home. I also read many of the reviews and made mental notes. Finally, I tried the recipes remembering to dry thoroughly and use liquid carefully. AND to my suprise this dish was excellent even our niece and nephew (7 & 9 yrs old enjoyed it! I can't wait to make this again!

I was afraid of how this would come out. I thought it wouldn't taste good and I would be angry I'ld tried it. Wrong, the best low carb potatoes I've ever had. Great tasting and the whole family loved them, you should try them too.

It's obvious these aren't real mashed potatoes, and if you expect it to taste like potatoes, well..... But, I did add some prepared horseradish and it really gave it some extra zip and even my husband and son liked it!

I tried these today and while I was making them my fiancee was saying "eew gross". Then he tasted it. He wanted a dish of his own. I added rosemary, that was really good. We both loved it.

This recipe is amazing. I didnt think it would work, but it did. My whole family enjoyed them. They taste like the real thing, its really incredible. I thought I had to give up mashed potatoes forever, but these taste just as good, if not better.

Let's face it, there's no real subsitute for mashed potatoes. But, for those looking to cut carbs, this is probably as good as it gets. I recommend roasting the garlic (Emeril has a recipe on this site and using salted butter (if you're not also watching your salt intake for extra flavor.
