    Excellent! I was so surprised that I enjoyed this dish as much as mashed potatoes, if not more as this has more flavor. I did substitute heavy cream for the cream cheese, as it is not allowed during Phase I of Atkins. It was a little thinner, but can be thickened with additional cauliflour.

    I would never confuse this for mashed potatos, but it dose make a great substitute for those of us trying to lay off the potatos. I'll be making this again soon.

    My only modification was to cook throughly in a microwave dish, (no draining this way; This also works well for the spaghetti squash. Otherwise great recipe, and they freeze well too. Thanks for making low carb fun!!!

    For our Christmas Dinner I served these amazing Mashed Potatoes which are totally Potato Free! My Grandfather couldn't tell the difference and my entire family, most of whom are on a low carb diet of some kind, loved the fact that they didn't have to give up flavor. I had everyone asking for the recipe...I told them foodtv.com! Thanks:

    Well I really love mashed potatoes but don't like cauliflower at all. I could eat this but really would rather go without. I served them for Thanksgiving and everyone just had a small taste. I threw away 3/4 of them. If you want to try it keep in mind that it takes a lot of work to get most of the lumps out. I added cheese & put them in the oven to warm.
