    An absolutely awesome recipe which I will make again. I couldn't be bothered patting the cauliflower dry so I simply drained the water from the pot and returned it to the still hot (but turned off burner with the lid on for a few minutes which evaporated any excess water. The consistency was just like 'real' mashed potatoes. Perfect.

    Very good. I used a salad spinner to dry the cauliflower. This is a delicous base recipe; there's a lot you can add to make this even better. I loved that it had a "decadent" feel to it. I felt almost like I had mashed potatoes but none of the guilt of cheating on my low-carb diet! Try it.

    These cauliflower mashed potatoes are amazing! I put the garlic in with the cauliflower, since my hubby doesn't like the taste of raw garlic, and also replaced the cream cheese with sour cream, since that's what I had on hand. I'd recommend using a food processor if you want them extra creamy, since the hand blender didn't get it completely smooth. We both loved them and will be making them again soon!

    We had some leftover roasted yellow and red bell peppers from last night's burritos, so hubby threw a couple of them in the food processor with the cauliflower....AMAZING!!! They gave the cauliflower a tiny bit of texture and flecks of color. We'll definitely be doing that again!

    Amazing alternative to carb rich mashed potatoes. Instead of cream cheese I used garlic hummus for a healthy choice. Turned out amazing!!! Thx

    We like cauliflower, but my daughter doesn't. This recipe is great for the whole family. I didn't get the cauliflower drained very well so my first batch was not as thick as we would have liked, I'll know better next time. I doubled the garlic (because we love it but forgot to add the parm. cheese, it tasted just fine to us, so I think we'll just leave it out all the time.

    Sooooo good, didn't think I would like them but Absolutely loved them!!!! I cooked the garlic with the Cauliflower so it would Absorb the flavor and I wouldn't have hard Pieces of garlic.

    I've found that, although I hated cauliflower for decades, I really like mashed cauliflower because the texture and taste are totally camouflaged! I tweaked this recipe to make it especially yummy: don't waste the water or time boiling the cauliflower. Cut it into small pieces and steam it (I used chicken bullion in my steaming water. Drain it well in a colander, then toss it in a food processor with the cream cheese (I used Neufchatel for less calories and a creamier texture, garlic (best with roasted garlic, about 2 tsp. of chicken bullion granules, pepper and parmesan. This is a great, healthy side dish that even I, a confirmed cauliflower hater, loves. Enjoy!

    We used two heads of cauliflower, cooked, drained and spun off the water in the lettuce spinner. Let the steam evaporate for a minute, then added roasted garlic (from the olive bar at grocery store and smart balance butter. I also added fat free cream cheese, grated parm. and used two Swansons chicken flavor boosters plus salt and pepper. Since my husband is not a fan of cheese, next time we will skip the cream cheese and parm cheese, and try sour cream instead. Also, we happened to be eating grilled onions with our dinner, and next time we will try what another reviewer mentioned: saute onion and garlic in skillet, then add to dish.
