    If you really like cauliflower you will like this. I liked it and so did my son but the other two members of the family said it was baby food. I have another recipe from sara moulton that we like better. It is easy though.

    "Mock" is the opertative word. However, for those who choose the low carb life style, this is an excellent recipe to accompany meat dishes. I do catering and the customer feedback on this was very good!

    I was pretty skeptical about mashed cauliflower, but the texture really was just like potatoes. Two things I would recommend: 1 Definitely use butter. I think the flavor is much better with it. 2 Use fresh parmesan. It gets too salty with pre-grated stuff.

    Overall, I would highly recommend this recipe.

    Even if you don't think it tastes "just like" mashed potatoes, it's "mock". It's a fun and great tasting substitute, and another delicious way to use cauliflower!

    Oh, my God! These are so good. But be sure to dry the cauliflower well. May never go back to potatoes again, especially with the roasted garlic!!!

    I love this recipe!! The only suggestion I have is to peel a clove of garlic and cook it along with the cauliflower. I think it has a much better taste than the minced raw garlic. My family turned up their noses at cauliflower...oh well...more for me!!
