This recipe is unbelievably delicious. My boyfriend who hates cauliflower had 2 extra servings because he loved it so much. He even said that he would rather eat this than real mashed potatoes because it tastes even better. I used roasted garlic instead of raw (about 2 cloves, roasted and I used fat-free butter.

You really have to try hard to figure out that these are not potatoes! I usually add a little extra cheese. Make sure you drain the cauliflower really well and don't boil too long. The first time I made this it was more like a thick soup (but still delicious!.

I really love this recipe. The only thing I did different was that I microwaved the cauliflower (frozenwithout water in it for about 10 minutes. I didn't have the watery taste and didn't have to dry the cauliflower. This is a necessary staple in my freezer.

...especially for it being low carb. Just have to puree the cauliflower enough and it will definately pass, on looks alone, as mashed potatoes. I, myself however, will cut out the garlic powder. Otherwise, this recipe has become a staple in my low carb menu box. Thanx George.
