    I've made this twice and the second time I microwaved the cauliflower based on a suggestion of another review. I feel it dried out the cauliflower a little bit but it saved me from washing any pots. I also used Laughing Cow garlic and herb cheese instead of cream cheese since that's what I had on hand (and only 35 calories!!!. Couldn't tell the difference from when I used cream chees except it gave more flavor. Roasted the garlic and used 5 cloves since I love garlic. Delish.

    I think this recipe is too complicated. When I cooked the cauliflower and looked at the rest of the ingredients in this recipe, I simplified it to how I make mashed potatoes. I pureed the cauliflower, added smart balance margarine, fat free milk, garlic and thyme. Salt and pepper to taste and it was done. I'm trying to eat healthier and fewer calories and this recipe calls for high calorie additions that really aren't necessary. It turned out very good. Tasted almost identical to the real thing.

    OMG!!! Trying to incorporate healthier items in our dinners. And let me be very honest - I am NOT a cauliflower fan. Not a fan at all...

    WOW, WOW, WOW!!!!! This was like candy!!! Four foodies last night cleaned their plates and asked for MORE!!! We ate two full heads of cauliflower between 4 people!!!

    My substitutions - used 2 TBSP of Light Sour Cream in place of the cream cheese. Used salt instead of the chicken base (as shown. Did NOT use butter. I put it in a food processor and the texture was more like polenta instead of mashed potatoes. Will use an immersion blender tonight - yes, am making this again. THANK YOU GEORGE STELLA!!!

    I just had to register so I could comment on this! I made it today and the whole family says it's a hit! My cauliflower was pretty large so I added more cream cheese and parmesan etc. but this was awesome! We're doing Wheat Belly by Dr. Davis so potatoes are off our list of things to eat and being a diabetic the cauliflower doesn't effect the blood sugars. Hubby has lost 55 pounds and I have lost 27 with lots of inches lost in our waist. I didn't read the reviews before I made the recipe but came back and read them later and I will do the nuke next time instead of boiling the cauliflower so that should save a lot of time there. I also just added my butter to it and blended it all together. I am a potato person big time and always have been!!! IF this can satisfy my love for potatoes it can anybodies! AWESOME recipe!!!!

    This is delicious. I love mashed potatoes and I can't eat them all the time. This makes a nice substitute. I served it to my friends and they gobbled it up. I don't boil my cauliflower. I nuke it in the microwave for about 15 minutes, and that eliminates the wetness. I roasted my garlic as well. I eat them with bacon bits, melted cheddar, and a dollop of sour cream and chicken gravy.

    These are great! I'm eating them as I type. : Definitely the best mashed cauliflower recipe I've tried thus far. I omitted the cream cheese though, as I had none, and still delicious!

    I'm rarely moved to write reviews of recipes, but this is OMG good. We healthified it a bit by subbing in neufchatel for the cream cheese and Brummel & Brown for the butter, but it was still amazing! Taking the time to roast the garlic made it that much better. YUM.

    I made this last night and two of us ate every bite. It was better than mashed potatoes. I placed all ingredients except cauliflower in my Ninja and blended until it made a paste. After letting cauliflower dry on the paper towel for appx 2 minutes I added to the mixture and blended until smooth. They were delicious and not at all runny. I may make them again tonight!
