    Taste was good. I added roasted garlic. Consistency was mush, and yes I did dry the cooked cauliflower with paper towels. Tomorrow I'm going to take the leftovers, mix them with panko crumbs and parmesan and bake them in the oven. I know this negates the less carb factor, but this was really too mushy

    Love the mock garlic mashed potatoes! I lightly sautéed the garlic in olive oil before I blended it. The consistency is different, but not bad! Great flavor. Perfect for my Weight Watcher's plan. Saved myself about 3 points! I'm such a carb lover, but I don't miss it with this great substitute!

    These were pretty tasty, but the texture was a little off for my family. I would also recommend cutting down the garlic a bit. I used a suggestion I read on here for steaming the cauliflower instead of boiling it which resulted in not having to dry the cauliflower with paper towels at all. I will probably use this recipe again, but I think I might try roasting the garlic first.

    I gave this five stars because the taste was very good, however if you are looking for a "true" mashed potato consistency you will be disappointed. My family loved it and with the new low carb diet we are all on...this was excellent! Served with meatloaf and green beans and it was a hit...packing the leftovers for lunch tomorrow.

    This recipe was delicious! The cream cheese really helped keep everything thick and delicious. I added fresh sage instead of chives and it was pretty good too! I would be careful with the raw garlic - don't add anymore than required.

    Wow- One bag of TraderJoes Califlower in a pot of water for 6 minutes- toss in remaining recipe
    and you have a killer side dish.
    Will be serving this with holiday dinner of Beef Tenderloin for sure

    The first time I made this, there was a lot of moisture in the cauliflower from boiling and despite squeezing the heck out of them between paper towels (very hot by the way the dish was a bit runny. The second time I steamed the cauliflower and it did the trick. I didn't have to squeeze them out between paper towels. I also added a wee bit more cream cheese. I don't have a food processor so I used my blender and pulsed. It worked just fine. Amazing recipe that is a keeper!

    This recipe is a blessing for me since I have to keep away from Night Shade Foods which include all potato's for me. I need to get an infuser so the outcome is smoother the hand mixer just didn't do it.. I had to add more seasonings than what was in the recipe but this recipe is delicious. Wish I had made this for Thanksgiving. I am going to use this recipe for Sheperd's pie, yum!
