    Really easy to make and completely hits the spot if you're craving some good ol' comfort food. I too added sour cream instead of the cream cheese, makes it a bit creamier. topped it with a vegetarian based gravy and had everyone asking for seconds!

    Unbelievable. Everything they say is true. It's taking everything I can muster to not eat the entire thing. Thank you for this amazing recipe. The bay leaf hint was excellent; I also threw in some thyme and rosemary to the cooking water, as well as a big spoon of jarred chopped garlic. 1 T. sour cream instead of cream cheese and 3T salted butter. Man alive, are these good.

    LOVE this recipe! Made it tonight to serve with stuffed cabbage and OMG! I found that adding bay leaf to the cooking water makes it taste even more like homemade mashed potatoes. Also, let the cauliflower sit in a colander for a while to be sure its dry. Put it back in the pot and add the rest of the ingredients over LOW heat and mash. When making twice baked potatoes for a holiday meal, I will fill some of the empty baked potato skins with this mash then bake them with the other "real" twice baked potatoes. I found orange cauliflower at the market one day and made twice baked faux potatoes switching the Parmesan with cheddar cheese. Filled the skins, broiled until melted and added cooked, crumbled bacon and chopped chives to the tops, served with grilled steak and grilled veggies - to die for! Thank you George!!!
    Forgot to mention you can make this recipe in large batches and freeze in freezer bags.

    Wowwee! Cauliflower certainly does take every flavor you add to it to the next level! Great recipe! Next time I'll stick to it and not add so much garlic; I loved it.

    Very Lite yet full of flavor, very happy with this as Im trying to cut back on my carbs when possible and this will make it a piece of cake ;-D

    These are really GREAT!! I served along side meatballs and greenbeans with bacon. Everyone loved this meal. Will repeat often. I'm so glad to see I'm not the only person joining or retuning to the low carb lifestyle. Not alot on the grocery store shelves anymore.....Such a shame, but it sure is forcing me to get and BE creative.
