    Awesome! Better than I expected. I just started a low carb diet and was hating it but I think I'll be able to go the distance with this recipe.

    It was really good!! Pretty darn close to the consistency of mashed potatoes. Looks just like them. I love cauliflower but I was skeptical about how much it would taste like mashed potatoes but it really does. It was quick and easy to prepare. Thinking it might be a good side dish for when Thanksgiving rolls around. So much easier then peeling all those potatoes and much healthier. I love garlic too and can eat it raw. If you don't like garlic all that much try putting the garlic clove in with the cauliflower when it boils. It will take the harsh taste away.

    Quite delicious, I paired this w/Beer Braised Chicken and the family went crazy! Easier than pie, I did take a few recommendations from the bottom of the recipe page as far as adding roasted garlic and chopped up fresh rosemary!

    My family did not care for this. I was really hoping that it would taste enough like mashed potatoes for them to want to eat it. My son and husband ate it, because they were hungry, but I will not be making this again. I love cauliflower myself, but will stick to my old steam prep in the future. It was easy to prepare though... Not a keeper for us....

    Wow, just, wow! Have given up the nastier carbs, including potatoes, but was looking for a good substitute. Made this tonight, minus the butter at the end, and it was simple and delicious! Wish my picky husband hadn't seen the recipe open, I'd have liked to see if he noticed any difference (I didn't. Might try steaming it next time, as per mismit6's suggestion, and roasting it first will be another variation I'll try. Delicious and quick, certainly faster than making mashed potatoes - will be making this a lot! :

    Better than real mashed potatoes! I usually don't like white potatoes in general. They will become a weekly staple.

    Great recipe. I made this yesterday then left the house telling my mother in law, "I made fake mashed potatoes, help yourself." I came back that night and it turns out my husband and mother-in -law thought it was mashed potatoes from a box! lol. They had no clue it was cauliflower! It was delcious and sat better in my stomach then actual potatoes.

    Simply the best substitute I have ever had. No more mashed potatoes for me. I look at carbs injested instead of calories. This is truly a no guilt pleasure that I can eat all the time. The person who came up with this idea has to be a food genius lol :-
    I didn't use measurements and I used the frozen cauliflower that comes in a bag ($1.00 at kroger. I put it in a smoothie blender, but it didn't move so I added a little water which made it a little too creamy so I made another bag of it and mixed it with the creamy batch. Yummy yummy yummy for my tummy tummy tummy.
