    This is a very fresh take on the ordinary cheesecake. I reduced the amount of lime juice to 1/2 cup and substituted the rest with 1/4 cup tequila. Garnished with very thin lime slices.

    This recipe was very good for a low carb dessert. Tasty low carb desserts are hard to come by so I am delighted when I find one. This is definitely a keeper.

    I recently had another LC cooking party with my friends. We had the Key Lime Cheesecake for dessert and I must say I felt guilty for wanting to hide some of it so it wouldn't all be gobbled up that night!
    The texture is cool and creamy, not too sweet, not too tart and not too gelatinous like some of the other "no bake" pies I've tried to make.
    Real cheesecake can be a great LC dessert (without crust and sugar but often too heavy.

    When you're on Atkins you sacrifice a lot. So maybe I was expecting too much but I didn't like the texture. It was not creamy but spongey. It is Better than nothing.

    Just a bit to much like jello for me. Didn't really have a creamy texture. I'm gonna have to try the suggestion of the person below who used less jello. Good flavor, I liked the mock crust, just too jelloey.

    I thought there was a typo on the vanilla, so I used only 1 teaspoon and it was spectacular. My husband thought it was too "jelled", so the next time I used only 2 pkgs. gelatin and used heavy sweet cream, whipped, instead of the sour cream (and 1 t. Grand Marnier. Ohmagosh! This has become one of our favorites. Sugar-eaters, eat your heart out! (Ironic justice, wouldn't you say?! Thanks George! More!
