    The recipe was easy and the finished product looked great, BUT it really lacked the creaminess of a cheesecake that I was looking forward to. The ricotta gives it a dull, grainy taste.

    I am not a great cook, however my boyfriend and I are dieting and to keep him motivated I decided to create the low carb version of his favorite dessert. It was excellent, sweet and tart, great consistency, great flavor. Who knew that wheat germ could serve as a tasty crust?

    I absolutely loved this Key Lime cheesecake. I will make it forever. I think the lime taste was really refreshing. And it was so easy to make.

    During the summer I hate to run the oven, so this is the perfect alternative! It is soooo delicious. The key lime taste is a little strong at first, but it's easy to get use to. It's very thick and creamy and has the exact same texture as a baked cheesecake. You do have to be very very quick with the gelatin, that's the hardest part, other than waiting for it to firm up! I stongly recommend this if you love cheesecake!

    As a new diabetic I am casting about trying to satisfy my sweet tooth in a safe way. This pie was a bit of a disappointment to me. But, then, I haven't tried splenda before and for one who is used to sugar, I can tell the differance. The texture, although creamy to some extent, has that gelatin texture going on and I wasn't that pleased with the "mouth feel". But, it did have the lime to tingle the taste buds and I can see where this might grow on you, depending on how desperate one is for key lime pie and can't have the real thing. I'm trying to decide if just abstaining is better than trying to like sugar substitutes.

    This dessert is wonderful. I served it to my family that is not following a low carb lifestyle and they thought it was delicious. Then I brought the leftovers to my coworker who is following the low carb lifestyle and I can't believe how slow she eats it as she savors each bite. She had wrinkled had wrinkled her nose when I told her the "crust" was wheat germ but she got over it. It is an easy, refreshing summer treat. The hardest part was zesting the lime when in the middle of the recipe I realized I didn't have a zester so had to use a fork. Oh well.
