I think the idea of baking the potatoes with the cheese is a great idea. This combination of cheeses with the potatoes didn't suit my taste. After mashing them with the cheese and adding salt and pepper I tasted them. There just wasn't enough body to the flavor for me. I had to add garlic just to give some body. It made them better but not enough. I think I should have added parsley and bacon to round out the taste.
I think next time I will use salt, pepper, butter, milk, garlic, parsley, and bacon. I will then bake it with a small amount of cheese and bread crumbs on top to make it crispy.

Fattening as hell but so tasty! My bread crumbs didn't toast all the way but that was because I had the oven a little lower for the turkey osso buco, which incidentally, was fabulous! It's nice to have a side that can be prepped ahead. It was a hit!

I always watch the show and am somewhat intimidated by the style of cooking. I printed out this recipe without putting who it was from. To my surprise, the dish turned out remarkably well and we all enjoyed it! There were hardly any leftovers, might I add there are usually a lot of leftovers in our house. This recipe was very easy to follow and I was pleasantly surprised when I realized it was from Giada!

I was out of mozzarella, so I substituted smoked gouda. It added such a nice smoky flavor to the potatoes. Delicious!

I had some leftover "regular" mashed potatoes and decided to try this recipe to use them up. These were far better than the "fresh" mashed potatoes I'd served a few days earlier. I didn't have parmesan cheese, so I used mozzarella and a mix of yellow cheese. I also used Panko crumbs for the topping as well as leftover homemade bacon bits. This recipe is extremely adapable to whatever happens to be in the fridge that day, so this is how I'll make mashed potatoes from here on out!

I followed the recipe except for putting the bread crumbs on top. My husband is not ready for that sophistication! They were awesome and we really enjoyed the flavor. This was the first dish by Giada that I prepared but definitely not the last.

Made these for Christmas, and they were a hit. As the recipe would suggest, these potatoes are an impressive notch above the standard mashed potatoes. Don't expect any surprises, but do expect a very savory and elegant version of grandmas recipe. Very impressive to serve and easy to make. Very good recipe.
