  • 1/2 cup (4 ounces) mascarpone cheese, at room temperature
  • 1 1/2 cups water
  • 1 tablespoon sugar
  • 2 teaspoons pure almond extract
  • 1 teaspoon pure vanilla extract
  • 2 cups buttermilk pancake mix (recommend: Krusteaz)
  • 4 ounces almond paste, cut into 1/4-inch pieces
  • 2 tablespoons unsalted butter, at room temperature

Serving suggestion: maple syrup and fresh raspberries

In a food processor, combine the mascarpone, water, sugar, almond extract, and vanilla extract. Process until the mixture is smooth. Add the pancake mix and pulse until just combined. Add the almond paste and pulse once to incorporate.

Preheat a griddle or a large, nonstick skillet over medium-low heat. Grease the griddle or skillet with 1 tablespoon of butter. Working in batches, pour 1/4 cup of batter per pancake onto the griddle and cook for about 1 1/2 minutes each side until golden. Repeat with the remaining butter and batter.

Arrange the pancakes on a platter and serve with maple syrup and fresh raspberries.

    Easy and delicious! I actually made a big batch and brought them into work for lunch everyday...a little bit of breakfast for lunch to give me a pick-me-up! I LOVE almonds, so I knew I had to try this one out. I loved the almond paste here. It added a flavor and texture I don't think you can get from anything else. Thanks, Giada!
    excellent easy and simple, especially when the cupboards are bare! I made this recipe with 4 ounces goat cheese, Krusteaz waffle mix, vanilla, sugar and water! it turned out delicious! used a non stick pan no problems with burning. didnt even have syrup...served it with fresh strawberry jam, it was reminiscent of strawberry cheese cake! So unique and delicious!i!
    No one in my house liked these very much. I followed directions, and they were very pretty but no one was crazy about the taste!
    I am going to disagree about this recipe.  
    They do taste great, BUT they are almost impossible to cook without burning or ruining the shape of and without a TON of butter even on nonstick. 
    I used a very large le creuset skillet with butter and measured an exact quarter cup every time. No way they were anywhere near done on one side in 90 seconds. 
    In desperation, I got out my nonstick waffle maker and buttered it up, then for the second try I oiled it up. 
    Neither worked. The waffles came out in two pieces, one stuck to the top and one to the bottom no matter how long i cooked them. I wasted a lot of batter. 
    To top everything off, when I mixed the mascarpone and water in my Cuisinart, the watery liquid came out the middle. I'm tossing the two-month old Cuisinart out now. 
    This was a very expensive lesson. 
    Do not try this one at home unless you are a professional chef with a griddle.
    I have two picky eaters. We have making Alton's Instant pancakes every weekend now for years. I decided to change things up this weekend, with something differant. All I can say is OH MY GOD! These were sooo good. I used Alton's Instant Pancake mix that I always keep in the pantry and used buttermilk instead of water for the liquid. My boys licked their plates clean and asked for seconds. I think we have a new winner here. The only change I would make is to cut out the extra sugar that she added. They are a tad bit too sweet to havr regularly.
    Holy COW, these are AMAZING!! I have Celiac's desease so pancakes are a novelty (nothing that's gluten-free is as good as the real thing but these are out of this world! I subbed Bob's Red Mill gluten free pancake mix and made it as it states on the package. I added Giada's marscapone cheese, almond paste, almond and vanilla extracts. These pancakes have enough flavor on their own without any syrup! Just having come back from a vacation in Hawaii, I've been waiting to try some coconut syrup on something yummy and this was perfect. My new favorite gluten free Saturday morning food! Thx Giada!
    If you need take care of a sweet tooth, this is it. I found it very sweet and yet delicious!

    This recipe was fabulous!! Moist Pancakes, very tasty. I live in a very small town so we don't have access to almond paste, so I used almond almond paste clumps. Also Mascarpone is a little bit of a problem sometimes. One of our stores does sell it but at the time I was planning these they only had coffee mascarpone so I used it. These were still fabulous pancakes and leftover batter still good the next day. Thanks for the recipe!
    delicious. but everytime i tried to flip it, it fell apart and the bottom was already dark brown. i think next time, i will add an egg to keep the cakes together. definitely will do this again with alittle adjustments. :)

    This is truly the best pancake recipe EVER for almond lovers. I use Alton Brown's recipe for Instant Pancake mix which is so much better than prepackaged. I add an egg and use milk instead of water. So DELICIOUS! Thanks Giada!
    I've made these quite a few times now and I must say I think they taste great! They are very simple to make yet they taste special. They cook up perfect and are nice and moist.
    I doubled the recipe for family and everyone loved these tasty pancakes. Had some batter left over, so I put it in the fridge for the following morning. Pancakes were great again for round 2. However, the batter had a much thicker consistency, and the chunks of almonds paste had sort of dissolved into the batter, so chunks were not as apparent as the day before. For those that don't like the batter's consistency, maybe make the night before (minus the almond paste and put in fridge. Then in the morning, stir in almond paste pieces and cook.     Made these for Christmas breakfast. My family loved them. The mascarpone made it very creamy. Didn't think I would like to taste of chucks of almond paste so I finely chopped the almond paste. It turned out great.
    I thought these pancakes had a terrible consistancy. The batter was very runny and when I went to flip the pancake, it was not formed. The pancake just kind of crinkled up. I made it a second time, just to see if maybe I had done something wrong.... but it happened again. These ingredients were expensive and it was a waste of money.
    Can anyone tell me where I can find almond paste. I live in Northern New Jersey.
    Wow, this pancake is D-E-L-I-C-I-O-U-S. It totally works. This dish is so creative.This is why I like Giada, she's creative. The only thing is when yopu put on the almond paste you have to pulse it alot because if you have chunks it will taste weird. I was so exited to use my new Cuiasanart 7 cup food processor that's white which I got at Macy's $79.99.
    These pancakes are a great concept, I love nutty flavors in my favorite carbs, but these are just TOO overpowering for breakfast! It kind of tastes like you're eating almond perfumed pancakes. Also, the mascarpone makes the pancakes kind of creamy and heavier than the light, fluffy pancake I enjoy. I was really excited about these, but they definitely weren't what I expected. Not horrible, but not something I would spend so much $$$ to make again.
    I did not see the episode this receipe was on. I just needed something to do with leftover almond paste. This was so good. Made it for breakfast dinner and again on Sunday for breakfast. Will be buying more almond paste for sure. Also, I halved the recipe and it worked out nicely. You have got to try this...just as written...with the raspberries and syrup...super yummy!

    I made these pancakes, and they were fantastic! They were light and favorful! I ate 4, my husband ate 16 and would have eaten more if there were more to eat! Really, really good! They are expensive to make. Next time, I plan to substitue cream cheese for the marscapone. That will make it a bit more reasonable. The almond paste is expensive, but there would be no substitute for that. These are the bomb, and you will be hailed as the best cook in the family if you make them! You can always depend on Giada's recipes for being the best! Thanks so much!
    I first made these for overnight guests and everyone loved them!! Now my sons expect them every Sunday. I am never disappointed with Giada's recipes, simple and so yummy!
    Made this for my family during a recent snow storm. The pancakes were delicious... My kids enjoyed them, which is hard task to achieve. I will definitely make them again. Some of the items were a little pricey but the shelve life is long.
    These were delicious! We served them for overnight guests and everyone commented on how delicious they were! I struggled finding the almond paste at first and ended up finding it in the pie filling section of the grocery store. These will be made over and over again!
