After a sleepover I have finally found a pancake recipe I can wow my pre-teen son's friends with! The pancakes are flavorful and moist. Before flipping, make sure you see lots of bubbles - a sign of doneness.

I made this recipe with cream cheese instead of marscapone and did everything else the same. This was the easiest pancake recipe I have tried and is very flavorful. I love the bits of almond paste! As Jillian noted below the pancake batter is thinner than regular pancake batter but it is supposed to be that way.

These were the best pancakes EVER! So easy and I agree w/ Jim- no syrup needed. The batter was a little runny, but once we got used to the texture- a fast and delicious "breakfast for dinner". Thanks Giada, you did it again!

I made this recipe with standard cream cheese instead of marscapone and the texture did not seem to suffer.
There is tons of flavor from the almond and vanilla extract. The almond paste also added enough sweetness that syrup was not necessary.
I will certainly make this again.
