My husband and I really enjoyed the Arancini di Riso. I was sceptical at first that it may not taste as good as it looked on t.v., or that the cheese would melt in the middle. But it was excellent. The problem was leaving enough risotto over to make the riso today!

This is the first time that I have ever tried risotto, and I love it. The thing that I like about this recipe is that it is very versitile, you can make it as a side dish one day and an appetizer the other. I really do recomend this recipe.

The rice balls were so good. I had a problem finding some of the ingredents for her risotto so I used a packaged mix then followed her recipe for making the balls. I put them in the fridge for 15 minutes to get firm and that made all the diffrence. I will totally make them again they were awesome !

My husband and I loved the risotto recipe, it was easy and had a wonderful taste. The next day we made the risotto balls and had another delicious meal. The crunch as you bite into them and the gooey cheese inside was fabulous. We will definatly make them again!

Thanks Giada for what to do with the leftover Risotto. It became Il primo amore for my family of one of so many of your recipe.

This is so simple to make for a get together. The taste is crunchy but is tender inside. Way to go!!
