    I thought bacon was the way, but not anymore! I made this for my boyfriend and I and he couldn't stop eating or talking about it! I used heirloom tomatoes (in season instead of regular ones; it gave the dish a great color. I also used nicoise olives instead of regular black olives; you don't have to slice them, they're bite size already. Should have used day old bread, it would have held up better. Served the dressing on the side and only used 1/2 cup oil. We're still eating this dish 3 days later, mmm!

    This was my first time making Panzanella and I thought the recipe was great. I made a couple of mistakes though that I felt could have made it a bit better. I cut the bread pieces too big and did not use day old bread. Next time I will make sure to use older bread and smaller pieces! I also did not chop the olives in half which I wish I would have done because sometimes a whole olive is too salty. I will make it again with my changes and hopefully it will come out better!

    I made this as a side salad for dinner and it was tasty. It actually could be eaten as a main dish. It is light and flavorful. I did not give it 5 stars because I did not think that it was wonderful, but it was tasty and I will make it again. I did not have a grill pan so I browned the bread and artichokes in the oven on 350 for about 12-15 minutes. I think you could even use ready made croutons for this. It might be tastier with a little lemon juice added.

    This was a real winner for us! Was so simple and had such a wonderful flavor. Took the leftovers to work the next day and it was still great. I thought that the bread would be soggy but, not at all.

    All my favorite things in one bowl!! I cut back on the oil but was still moist and had enough flavor. I could not put the bowl I made it in down long enough to get a plate - just kept eating straight out of the bowl! Had it for lunch all week long. YUM

    This is an excellent dish! Grilling the bread makes a big difference( I used Ciabbata/or other rustic Italian bread..I also added some freshly grated parmesan..YUM!
