Mmmmm. Eating now while writing. Delicious! I love that it's a "creamy"soup, made with no cream...and therefore low-cal too! This is a healthy, fresh, very satisfying soup. I had been concerned that something as fragrant as mint might overpower it, but not at all...very subtle. In fact, I can hardly taste it so you could probably add a bit more, if you want it more obvious.
The artichoke is predominant, as it should be, but nothing overpowers; it all makes a balanced, mellow tasting blend.
I can see entertaining with this, as an appetiser that looks fancy yet is so simple to make. I didn't have fresh spinach on hand but used frozen and it's just fine. Next time I'll try fresh. Otherwise, I made the recipe as advised.

I LOVE this recipe! I make it regularly and my husband loves it too. The first time I made it, I did not have mint so I used cilantro - it's so good that I've done it that way every time! I always add more spinach too. It's a perfect light soup to start any meal or use instead of a veggie side. It's quick and easy and always turns out great!

We absolutely loved this soup! I did add one clove of garlic with the onions and celery. My husband did not like the lemon - said it overpowered the soup. I thought the lemon was a great addition. Try the soup before adding the lemon so you don't share my husband's sentiments. This really is health in a bowl! AWESOME!

We really enjoyed this soup! I didn't have a lemon on hand so we used some lemon balm that we have growing in our yard~ along with the fresh mint that we have growing also : We added some grated parm cheese on top when serving and it was soooooooo good! Will def make this again..maybe tomorrow...with a lemon. (jealous of the person who posted that they have a Meyer tree in their yard

Happy Earth Day! In honor of it I made this green soup It was delicious! I added 2 cloves of garlic as was suggested by another reviewer. Did not buy the frozen artichokes- too much $$$. Instead I bought a 14 oz can of em and just drained em- didn't need to chop em up. Healthy and good soup- would make it again.

Soooo delicious! The lemon makes the soup and ties all the flavors together...don't skip it. All the ingredients marry each other perfectly and it is a simple, healthy, nutritious and light meal. I will be making this a lot!!

Loved this easy recipe ..... added 3 med. cloves of garlic and more olive oil. Second time
I made it I added about 2 cups of cooked egg noodles and with a small salad and crostini, we had a wonderful meal.

great recipe! We have a vegan in the family so I used Imagine brand No Chicken Broth. Absolutely cannot tell the difference. It tastes just like chicken broth. Would make it again....like the garlic addition.

I added 2 garlic cloves to this recipe and it really enhanced the overall flavor. I am a really big soup lover and I liked this soup. It is very healthy and refreshing and I enjoyed the texture. It has a unique flavor and the lemon juice made it yummy.
