SUPER yummy! Make this recipe! You won't be disappointed! Of course, I did make a few changes...I didn't bother with the herbs in the chevre, but I can see how that would be a nice presentation for guests. I used a drizzle of EVOO instead of butter to saute a couple of shallots (instead of the leek. I grilled the asparagus before adding it because I thought it would add a nice flavor....righto! I also only used about 1 1/4 lbs asparagus and added 1 1/2 cups fresh peas. I know, I know, you're thinking 'did she follow ANYTHING in the recipe???' You know how it is when you want to use up what you have in the frig...I served it with a dollop of chevre and some crumbled turkey bacon. Soooo delicious! And low in fat & calories...just polished off the leftovers for lunch!

WOW _ this was an awesome, easy recipe. I am a huge fan. I did add one potato, diced to the simmering broth for thickness and light sour cream at the finish which was great. The flavor of this soup was so simple and elegant yet hearty enough for my picky husband! YUMMY! I will make again and again.

So I created an account to just review this recipe! I have done some recipes from the FN site but none of them have made me wanna write in like this one. First, don't radically change the taste of this soup, it is amazing! The only thing I did was add 3 leeks instead of one and used vegtable broth and let it simmer for a couple of hours. The soup is unbelievable on its own but the goat cheese takes it over the top!!! It just melts in your mouth and I kind of wish I made more its that good : Oh and I usally really don't like asparagus at all but this soup was so earthy and really brough out the taste of the asparagus yet its fancy and super easy to make! You rarely find all of those traits in a dish. I could see this served in a 5 star restuarant! Enjoy : Giada you are the best!!!

I made this today for a post-Christmas lunch with family and all enjoyed!!! The leeks and the goat cheese and fresh basil make this dish extra special. I just cannot hardly believe how yummy and awesome this soup is. It makes you look like a really great cook. And so so easy. Thanks Giada!!

Excellent Recipe..I have made this numerous times and have served it Hot and Cold..The only thing I add are more leeks than it calls for. I usually add what is in the bunch which is usually 3. Love it! Thanks Giada!

This soup is amazing and easy to make! I have used a little less butter than suggested and it still came out fine. I have also used cream cheese instead of goat cheese, because that's what I had on hand. I have also used this recipe as a base for almost every soup I make now. I've made it with asparagus of course, broccoli, cauliflower and carrot soups. Thanks Giada for another great recipe :
