Love, Love, Love! I am not a fan of traditional hummus, but I adore avocado. So this was the perfect marriage of the two things. Wonderful as always Giada!

Healthy, easy, a good 'go to' quick appetizer. I omitted the arugula just because...I used cilantro and lime juice bc the avocado seemed to steer me in that direction. I needed to add sufficient salt bc it was bland, and adding a few healthy dashes of tabasco helped too. Someone said olive oil wasn't healthy? Huh? It's common knowledge that it IS healthy for you, and a few TBS. of olive oil for ALL this dip is hardly going overboard. In fact, I even drizzled a little EVOO on top before serving! Just sayin' :

I saw this when it first aired and made the recipe with adjustments the very next day. I have made this SO MANY times since. It is now a regular dip in our household. My son likes avocados but doesn't like the additional tomatoes or onions, etc in guacamole, so I have often set aside mashed avocado for him. When I saw this, I thought he would really enjoy it and I would really enjoy the added nutritional benefit of all the ingredients. I substituted spinach for arugula and cilantro for parsley. I served with tortilla chips since I can't have wheat. We have also used this as a very healthy and tasty dip for cut veggies. LOVE it! Thanks Giada!

I absolutely LOVED your Meatless Monday segment. My husband and I have been vegetarians for almost a year and were excited about this episode. I made this for a Super Bowl party we are going to tonight. Our grocery store was out of arugula, so I substituted watercress instead. We will be making this a lot in the future! Thanks, Giada! xo

Very good, very healthful -- especially if you skip the additional 2 Tbs olive oil at the end. I just used a bit of the liquid from the beans instead and it was plenty creamy. Next time I'll add a pinch of cumin and cayenne for a bit more flavor and heat. I skipped the parsley and didn't miss it.

Purchased our first food processor, and this was the dish to give it it's inaugural run. It is delicious! We used spinach because neither of our stores had arugula. Thank you Giada!

Absolutely divine! Good quality ripe avocados and fresh crispy baby arugula made it creamy and crunchy. I added just a pinch of ground chipotle pepper to the hummus for a "little" kick. It is a repeat performance for sure. Thanks Giada!

I am not a huge fan of traditional hummus, but this was delicious! It was very easy to make and easy clean up! I did go a little over board with the lemon, next time I will use the juice of 1/2 lemon, so I added a tbsp of honey to offset the acid. This worked perfectly. I will definitely make this for our next family get together! Thanks Giada for yet another wonderful dish!
