If anyone is still searching for the 2" and 3" biscuit cutters, they are advertised in the current Williams-Sonoma catalogue. It is a set of 4 cutters with a 1.75" and 2.5" cutter included. Price is $16.00. Hope this will help those who were delaying making these cute little pies!

I made these petite pies for my dessert party and it was a hit. It wasn't very sweet which everyone liked because I had other sweet desserts. This is good to go with coffee.

Made a dbl batch...some were the strawberry and some were caramel apple. The caramel apple actually turned out better. Tossed small pieces of apple with a little bit of flour, salt, cinnamon, and sugar. Topped with a small bit of butter and 1/2 kraft caramel, then topped with top crust. After brushing the egg, I sprinkled more cinnamon and sugar. The strawberry wasn't sweet enough (thanks for the suggestions! and the filling almost all boiled out so it was pretty much an empty shell. Willing to try again as these are soooooo cute! Thanks, Giada!

This can also be made as an open tart, just fill it up more, with raspbery, mixed berries or peaches as well - better yet, a thin slice of dark chocolate on the bottom before the filling. You can even get the ready tart shell from the market.....Have fun!

By the way, if you can find an Asian market, use the Tapioca starch, it makes clean, clear starch, the others tend to get couldy.

the first time I made these they were too tart, so this time I added a tablespoon of raw sugar to the mix and a tsp of finely chopped basil. I also changed how they were made by making them into "hand pies" instead. to time consuming fitting the pastry circles into the little muffin cups. they turned out amazing and much easier. Just as pretty too. thanks Giada

I was very excited after watching Giada make these so off to the kitchen I went. Of course, the cutters I had weren't 2 & 3" so I used drinking glasses to get the EXACT measurement. The 3" didn't seem as large as what she demo'd on the show so the top pastry wasn't quite seem large enough to cover the bottom - evern after crimping! Hence, the juices seeped out - not very pretty. The cooking time wasn't long enough (just had my oven calibrated so the dough was a bit undercooked. And they were quite tart! I would cut back on the orange & make sure to chop the strawberries fairly fine so they fit in the muffin tins. The parchment paper was a great tip. STILL love Giada & the show!

I love this recipe but i also like recipes that you can do a little different everytime w/ different flavors. For this, can I use the same ingredients i would for a sweet potatoe and still use the mini pie theme?

I just made these right now and they came out more tart than I was expecting. I was eating the extra filling while they were baking in the oven and they tasted sweet enough by itself, but it wasn't as sweet in the pie. I'm not sure if I did something wrong. Either way, I still love them.
To answer Renee's question of where to find the 3" & 2" cookie cutter--I found my set at Smart&Final. I didn't find it at my BedBathBeyond. If you don't have a Smart&Final, then you might find it at a restaurant supply store.

I would like to serve these as a bite of something sweet after a girlfriends' cocktail party, but with so much other food to prepare, I would love to make several batches a few days ahead and freeze them. What do you think?
    Thanks

Hobby Lobby has all sizes of cookie cutters.
If you don't have a Hobby Lobby, you might try Bed, Bath and Beyond
