Let me start by saying I LOVE potatoes. My husband says I must have been a potato in a passed life. The potatoes are AMAZING and SOOOOOO easy. I've made it 3 times in a month.

I've made these a couple of times and they are wonderful. Its a great flavor combo... I've made them once with the pancetta and once without.. its good both ways... My fiance loves them( he eats them with ketchup.

I loved it! i made it a couple weeks ago, because i had some red potatoes left that i did not use and they worked. I know the recipe said russet but i did not have those in my fridge.
I also like the flavor of pencetta and reagular bacon and they went so well together. i am going to make it again.

ok. when i saw giada cooked this recipe, it looks delicious so i made it this morning. didn't use thick sliced pancetta but thin...it's what the market sells; used a pckg of bacon; threw most of the bacon fat and used olive oil. after cooking it, i wasn't sure how i'm supposed to serve it but since it's still morning, i ate it for breakfast w/scrambled egg and toast. not bad...but kind of stuffed. not sure if i'll make it again...kinda greasy.

I sprinkled a little bit of green onions on top before serving. It was a really good side dish.

Absolutely a fantastic potato side dish. For frying the potatoes, I only used about a tablespoon of the pork fat left from the pancetta and bacon and then added about a tablespoon of olive oil to suit my tastes. Potatoes came out crisp, crunchy on the outside and creamy on the inside.

I always love your recipes, but didn't care for this one. The potatoes cooked in all that bacon grease just didn't taste good. They absorb all that grease. It would have been better to have drained all the bacon grease out of the pan and cooked the potatoes in olive oil, adding the drained bacon back in at the end. Also, some chopped onion instead of the garlic would have been good.

I made the potatoes with bacon (didn't have pancetta. It was delish!! the whole family enjoyed it. The garlic and thyme give it a great flavor and yes, you must cook the potatoes in the bacon greese.

Bacon/Pancett/Potatoes. So good. This is definetly not a "big family" friendly recipe. Less than 4 people and your good. We usually have 7 so I may have to bring a wooden spoon to slap paws from triple self serves next time.

What I love about Giada's recipes is that they have so much flavor you can cook with foods that higher fat/cal levels than you normally would because you get fuller on flavor faster (so no need to eat 20x the normal serving. Bacon, pancetta & potatoes are all things I do not normally eat -- and man this was as decadent as you think. But again, so many flavors so if you can limit yourself with the serving size you think is appropriate you'll be very pleased. It holds well for leftovers, as well. A few mods -- you could get by 2-3 slices of bacon & 1 piece of pancetta. The recipe seemed to be more meat than potato (which added to the flavor but you certainly don't need it all. If you want to just make for 1 person, just use 1 slice of bacon, 1 slice of pancetta & 1 potato. You'll have plenty. Enjoy this! So savory!
