Like another viewer, I used all bacon. I only had rosemary too so I used that instead. On the show, Giada does cook the potatoes in the grease and this adds a nice flavor to the potatoes. We had the leftovers for breakfast!

this one is a keeper for sure! I did everything as directed, but used 2 potatoes instead of 3. It was perfect. If you are real meat lovers like my husband and I, then throw in a couple extra slices of bacon =

My husband was excited to try this & asked me to print this recipe immediately after we watched Giada make this on her show. He made this recipe, & it turned out wonderful! Since we didn't have fresh thyme, we substituted dried thyme. Everything was perfectly seasoned for us. We served it as a side dish for dinner, but it would also be a perfect addition for breakfast or brunch. I enjoyed the leftovers the next 2 mornings, alongside my omelets. Thanks, Giada, for inspiring my husband to want to get in the kitchen & cook more with me (& for me!

This was a great dish...and so easy! The trick to getting the potatoes beautiful and brown is not overcrowding the pan. Ideally you want a single layer of potatoes so they cook evenly. They were crispy on the outside and tender on the inside. Great flavor from bacon fat! My guy loved them. Will definitely be making again!

We just finished eating, this was great. If the thyme leaves were absent, it would have just been like eating a breakfast dish.
