Takes time to make this but it's worth it. Everyone wanted seconds. Do not have Japanese eggplant in Albuquerque anywhere so settled for regular eggplant. Very Good!

When I saw Giada making this on TV, my mouth was watering watching it. This dish tastes just as good as it looked on TV. I used regular eggplant and it came out great. It does take some work but it was so delicious and looked so beautiful. My husband went crazy for it and we had to stop ourselves from eating more than one piece. I will be serving this again and again and can't wait to make it for the next potluck I have to go to.

This recipe was prepared for a small dinner party. It was easy to fix. Did not take a lot of time to put together. The flavors were absolutely wonderful. Everyone raved about the "new entree". They cannot wait to taste test another new recipe!!!

This recipe was easy to make and very satisfying. The cheesy inside was a nice compliment to the buttery, crispy crust. I had to covered up the top crust with foil after about 45 minutes of baking because it was browning too quickly. I also reduced the temperature to about 325.
