It is now Sept in Arizona -do I really have to wait until Thanksgiving?? Really great dish. Used thick cut bacon as pancetta is quite expensive-even at Trader Joe only place I could find it. It pork tenderloin on the BBQ tonite with potatoes. YUJM

I saw this on foodnetwork TV so I went on the website and found the recipe. The first time I've made this was on Thanksgiving 2 years ago. I figured I give this a shot, since it's the "ultimate mashed potatoes" and I saw good reviews. This recipe is delicious. Everyone loves them!! It's always the first food that's gone. Instead of pancetta, I use bacon. It is good, cheesy, and crunchy. Yummy goodness!!

This is a very simple dish to make, i made it last year for thanksgiving and everyone loved these mashed potatoes, i did not use the pancetta and still they were out of this world!! i will make them again this year! happy Turkey day everyone!!! and thank you Giada you make everything so simple! Super simple, blows all the other recipes that I have tried completely out of the water! I am a little concerned though, now my boys (6, 10, 11, and 16 probably won't let me do anything else! I have prepared it both ways (with pancetta and with bacon and they are equally wonderful. I have also made it with different cheeses, if you pinch pennies, sometimes fresh parm isn't in the budget. Still tasted great! Another suggestion, add fresh chives, makes a nice addition. Such a fabulous alternative to regular mashed potatoes. I have added this to my top 10 list of Giada recipes! I's so simple to prepare, I can cook it regularly on a week night. Giada doesn't disappoint!

Made for Thanksgiving and it was really goood!! I substituted the pancetta for bacon and it didn't seem to make a difference.

Made these for Thanksgiving 2010. The kids (18, 15 and 10 all helped with this dish! First year they've actually volunteered to help and liked what they made! A little worried about what they will do come Christmas : Going to try it again with red potatoes tonight!
