    This recipe is great, and I didn't miss the meat! I didn't have any fontina cheese, and it still turned out wonderful. My husband loved it! I did add more marinara sauce than the recipe called for and some red pepper flakes. I served this with some garlic bread sprinkled with the grated Parmesan. I will make this again, for sure!

    Delicious recipe! Being a vegan, I didn't add the cheese or butter, and it was very tasty! Lots of good hearty vegetables and a great combination of spices. Will definitely be making this recipe again!

    Served this at a pot luck on Friday for a dairy shabbat. Overheard a guest say, "I don't even like pasta, but I can't stop eating this." This is a great recipe, one I use over and over again. Feeds a crowd and makes them happy.

    Perfect. Very versitile and delish! I used regular Italian seasoning and green instead of red peppers.... I'll spend the money for the cheese - it can really make a difference, but $2 for a red pepper vs. $.64 for a green one... not when they taste the same. This dish couldn't be easier to prepare, I'll say it again - Perfect!!

    This is the best recipe I have found since using and watching food network my friends and family love it and it is great for Vegetarians. Pretty easy to make just a lot of prep time but it is well worth it.

    I often mix-and-match the vegetables with the seasonal vegetables provided to me by my local farmer. This dish allows for a lot of flexibility. Also, provolone works as a good substitute if fontina is not readily available.

    This recipe is great. My boyfriend who usually avoids all vegetables really loved the zucchini. This dish will remain in my cookbook and I look forward to making it again.

    just finished eating this dish... was very good =
    I added a few cloves of garlic to be roasted with the vegetables, and next time I'll add a sprinkle of red chili flakes for a little kick. the smoked mozzarella is important in giving this dish its special flavour.
