    SOOOO DELICIOUS!!!

    I'm not a big fan of pasta with tomato sauce, nor have I found many vegetarian entrees that I think are really tasty. This one is so delicious! I followed the recipe with only two exceptions--I didn't have enough peas, so I added some asparagus to the vegetable roast. That was a mistake--it doesn't seem to work with the other veggies. I also added some regular mozzarella to the top of the dish with the final sprinkling of parmesan. My husband and I both had difficulty keeping our portions reasonable. We just wanted to keep eating and eating. Also, I used fresh smoked mozzarella, which is hard to shred, so I just cubed it and added to the mix. I had never used this before and have a question for any more experienced cooks. Are you supposed to remove the brown exterior layer or use it? I used it because I thought that's where the strongest smokey flavor would be, but it didn't really melt. Although it was edible, it was chewy. Mistake? The smokey mozzarella in combination with the fontina and parmesan is a wonderfully flavorful cheese combination. I will be making this again and again. Oh, and I also used Barilla multi-grain penne to keep it on the healthier side. I'm eating leftovers as I type this, and still so delicious. Thank you, Giada, for contributing to my file of vegetarian main courses. I really like your recipes. They're easy to make and so tasty!

    Baked Penne - a new favorite!

    I'm not a very good cook, so the first time I made this it seemed like a lot of work. I've made it three times since, and can now say it's really not that hard at all! It's a fantastic way to get everyone to eat their veggies. Since it tastes even better the next day, it's great to make the night before & just reheat in the oven. I use different cheeses each time, my favorite is a blend of creamy Havarti and Gruyere.

    We love this dish. Sometimes we add shredded chicken, and we always omit the mushrooms. It tastes great- the roasted vegetables are sweet and tender. It makes a ton. Reheats really well for lunches all week!

    Wow!!! The combination of the smoked moz and fontina cheeses give this dish a wonderful flavor. Even my husband enjoyed it and he doesn't care for squash. I also added artichoke hearts and it was yummy. Perfect comfort dish to make for family or friends in a time of need, as it contains tons of veggies and isn't all pasta and doesn't leave you feeling heavy. This is going to be a staple in my house . . .

    My entire family loved this pasta. My 4 yr old does not eat veggies, but he tried them in this dish and it's the only veggies he'll eat! How cool is that!

    Excellent recipe but after two times making it, switched to "regular" mozzarella. The smoked was a bit much and heavy feeling. I also leave out the peas and add tomatoes. This time of year it's especially delicious with everything being in season! Thank you.

    Delicious with some tweaks

    This recipe is an absolute favorite, although I tend to switch it up every time I make it. Here are a couple suggestions I have: Substitute standard brick cheese or American for fontina if you're trying to cut costs. If you remove either the zucchini or the squash and replace with chicken sausage, the dish gets a lot more flavor and protein. I never make this with the peas or the mushrooms, and instead put in an extra green pepper. I have no idea why it calls for two tablespoons of butter all over the top. It's wholly unnecessary. The dish is delicious without it. If you're looking for a "top" to the dish, you can always sprinkle the mozzarella over the top instead of mixing it in. Overall, this is a great recipe!

    SO GOOD!! It makes a ton of food so there's a good chance there will be leftovers, which is great because it's even better the next day. So easy to make and so delicious. Even the most devoted meat-eater will eat this one up!

    This can be made with several different variations - I used eggplant (in addition to the other veggies) and smoked gouda in place of smoked mozzarella. It tasted great the next day as well!
