My husband is a meat and potatoes guy, but even he did not miss the meat with this meal. It makes a ton. Next time I will half the recipe. The smoked mozzarella makes the meal even more special. This is delicious.

My boyfriend was a little apprehensive about the dish from the title but once it was made he couldn't stop eating it. It's easy to make and makes enough for two people to eat for a week. I used a homemade red sauce instead of store bought and added a little dried oregano and basil to it before baking.

You can put in a great variety of veggies into this and have it come out well. I used Fontiago (fontina & asiago combination) cheese in it and it was amazing. I highly recommend making this dish. It's fairly easy and will impress guests!

Loved it! Loved it! Loved! And the leftovers the next day were just as good heated up. I added chicken to this dish and it tasted great! Also added a little more of the sauce then called for. Will be making this again!

Enjoyed making this dish. Had some zucchini in the fridge (doesn't everybody) and the vegetable/cheese combination sounded wonderful. It was. I used half the marinara and felt that was plenty. Added whole garlic cloves to the vegetables before roasting. Tasted great.

Giada never disappoints! This is a great recipe either for a summer evening (served at room temp) or for a chilly fall evening (served piping hot). Great flavors, easy to make and a hit with the guests!

My two children always like what I make for dinner, but I decided to make this pasta and they had thirds. They have never asked for seconds. I was sooo happy they ate a bit more, they loved it!

This is so yummy and satisfying. My grocery store did not have smoked mozzarella or fontina cheese, but they did have regular mozzarella and fontinella - it was awesome!

This pasta dish is wonderful. The roasted vegetables and the cheeses add such great flavor. I didn't have the smoked mozzarella. I used the fontina and pecorino romano and I added sliced cooked Italian sausage and everyone loved it. I'll be making this again and again. Thanks Giada for another great one.

Hesitant to make a lot, but wanting a new dish to get veggies, I made only half the amount recommended. Sorry I did. This was absolutely delicious and easy to prepare. Thanks so much!
