Deeeelish! I always watch Food Network all weekend long, and usually choose a recipe to make for Sunday dinner. This one was perfect! And sooo easy. Instead of a baked potato I put the sauce over pasta. Adding mascarpone to the recipe is GENIUS! It makes it rich and lucious. I put aside a portion for lunch the next day at work. As it was heating up in the microwave, at least 5 people asked, "What is that, it smells incredible." An excellent endorsement!

I saw this recipe on your show today and HAD to try it! I ran into some roadblocks at the grocery store (today must have been the day to cook with arugula and mascarpone! I remembered hearing you say mascarpone was kind of like cream cheese so I used that and just used extra parsley.. It was still WONDERFUL even though I couldn't make it exactly like the recipe! I cannot wait to make it again and hopefully find all the right ingredients! Even if you have a hard day at the grocery like I did, you can still make this dish taste amazing!!

I cooked this up tonight with mashed potatoes instead of baked, (to cut the time. I had goat cheese instead of marscapone. The whole thing was completely delicious and I look forward to cooking it for my family again!

This recipe was quick and delicious!! I will definitely be making again! I used cream cheese instead of mascarpone, because I had it at home already. With the left overs, I added some extra marinara sauce and spinach, and some meatballs and put over pasta. Overall, a really great meal!

Everyone in a family of five loved this! For the vegetarians I cooked the sauce in a separate pan using the same starters as with the sausage and let everyone build their potatoes as they wanted. That little spice in the arugula was fantastic. Have to admit I added more mascarpone then required. Also used canned tomatoes w/fresh basil. The sauce and sausage leftovers meant for the next day's lunch were finished off for that night's snacks instead. What a great way to jazz up baked potatoes!

Absolutely delicious ... so very satisfying and so filling! Thought it was a bit salty though (perhaps because I used Parmesan Reggiano cheese which is salty ... next time will use just 1/2 tsp salt vs 1 tsp.

This was quick and easy to make. I used baby spinach since the my little grocery store didn't have arugula. After everything was cooked, my dish was a bit too salty for my taste, so I added some Merlot wine, and then it was perfect. Very flavorful. Will make again.
