At first I was concerned about the flavors-esp. tomato sauce, tasting good with the potatoes, but it looked good enough to try. I loved it and a new item for me under the category of comfort food. The sauce mixture with the potato just melted in my mouth. The one issue was the length of baking time for the potatoes. They were all within the size range and still took a lot longer than the directions called for. I just extended the time and kept checking them at intervals until the knife went in easily.

Super yummy, fast and easy. I used Newmans Roasted Garlic jarred sauce, subbed chicken for turkey sausage and doubled the spinach. We'll definitely have these again but I'll try meatless or different sausage. Only problem is that our potatoes baked (as directed for over an hour and 20 minutes and were still hard...I'll nuke first next time.

So easy and so good. What a super way to give a baked potato a makeover. My husband loved it. We're eating the leftovers for lunch tomorrow. I'll figure out the Weight Watcher points and definitely make it again. I drained all of the fat off of the sausage so I'm guessing it's totally within the limits for an occasional meal.

I thought this would be a good hearty meal that would appeal to a man who loves potatoes. After eating it, my husband said not to bother keeping the rest as leftovers for lunch. It went in the trash.

I used fresh tomatoes and cooked them down to make the marinara sauce. I used 3 sweet sausage and and 2 hot. I microwaved the potatoes. I also substituted spinach for the arugula. Very tastey and it smelled so good while making it.

This is flavorful and easy to prepare. I'd give it five stars if it weren't so high in fat.

This was phenomenal!!! Super quick, super easy. You can sub a lot of the ingredients too if needed. I loved this recipe as it was easy, quick, and my family all loved it. Went great with a side salad. This will be a keeper in my recipe box.

OMG, this might just be my new favorite Italian dish! This dish was incredibly easy to make. Although after I plated it my family thought it took much longer. I did take a few short cuts, I bought the pre-washed and wrapped baked potatoes and cooked them in the microwave. I also substituted spinach for the arugula. I will absolutely make this again! Thanks Giada.
