My husband does not eat squash but he loved this recipe. Roasting the squash seems to work just fine I added sage as well.

It's rare that I don't love one of Giada's recipes but, this one just didn't do it for me. It was really heavy, maybe adding some milk or half and half to the food processer might help? I didn't have the same problem of oily-ness as others because I drained a lot of the oil off the pesto before I put it in.

I couldn't believe how easy this was to make. I didn't peel the squash myself, however. I find that a real pain so I bought cubed squash from my grocer. I am so used to squash being sweetened that this was a nice change of pace.

I found the flovor wonderful. However it is easier to simply cook the squash in the microwave rather than try to peel it.

    I love Giada De Laurentiis.
I'm also italian and I wish I would have payed more attention to my grandmothers recipes.
She passed away from breast cancer many years ago. Before I could get her best recipes.
My greatgrandmother didn't speak english ,just Italian.

I love pesto and squash so this was perfect for me! I made my own pesto so didn't have the oil problem that some others have had. I will definitely make this again!
