This was SO GOOD!! It was creamy and so delicious! The first recipe I tried from Giada, and I will certainly be trying more after this dish! I blotted off the oil on top with a paper towel and it was no problem. :

This dish takes me a long time to prepare since I am slow with the knife and it's difficult for me to chop and peel a butternut squash, but the results are so worth it... my boyfriend/friends love this dish too!

This dish does not disappoint! It is very rich and delicious in flavor. Try to make sure that the oil is well incorporated into the pesto (after i removed my first serving i noticed that a little bit of the oil from the pesto pooled in the empty space. Definitely worth trying, easy, and very inexpensive.

After making this, I sent the recipe to my mother. I love squash, I love pesto, it's a delicious combination! The only problem is oiliness from the pesto.
Delicious if made with homemade pesto sauce.

This was a tasty delightful way to eat squash. I don't know how to express how much I enjoyed this recipe. Nothing boring about this vegetable recipe. I will make it many times in the future.

i never would have expected butternut squash and pesto to taste good together, but it is delicious. definitely a whole new take butternut squash, my whole family loves it. will definitely be making it again.

I liked this recipe, but I think I could do without the pesto. I just liked the butternut squash by itself. Not a repeater though.
