    I decided to give this recipe a trial run before Thanksgiving, hoping it might be something unique to bring to the dessert table. The dark chocolate (Hershey's special dark and balsamic vinegar (Modena-made, acidity 6% combination was something I wasn't familiar with, but I love it -- that part of the recipe went off without any problems. It reminded me of the raspberry-filled dark chocolate squares, which are one of my favorite treats. It was -very- rich, but I didn't think it would be too bad in small doses. The cocoa was where I ran into problems. I'm not sure if it's an acquired taste, or if I needed to make a different selection ( Toll house 100% but it just didn't work for me or my taste-testers. It was incredibly bitter; I added sugar, even tried cinnamon, and then all three alone. I'm still not satisfied. I would suggest leaving them as simply chocolate and vinegar, but then it really is a bit intense, especially for such a small bite!

    LOVE LOVE LOVE I made some & took them to share @ work & everyone loved them....I am making them for my xmas exchange....Thank you Giada for all of your recipes every recipe I have tried my family tells me these recipes are keepers...

    These truffles were so delicious and very easy to make. I've made them several times and have impressed my friends with a gift of these unique truffles. However, I did double the amount of basalmic vinegar to increase the basalmic taste. Excellent! Also, I have also made one batch using sugar free dark chocolate--yummy good as well. I will continue to make these for gifts. Thanks Giada--I love your recipes and your shows.

    I was skeptical about these after watching the episode, but I do some balsamic vinegar. I used milk chocolate instead of dark ... we LOVED it and will definitely make these again!

    we served these for after dinner and nobody could believe there was balsamic in the chocolate! Don't let that turn you off, VERY yummie~

    This is amazing, the taste was fantastic and I don't buy truffles anymore because they were so easy to make, so I think that anyone who said that they didn't come out well didn't make them properly because they were amazing. Thanks giada

    Excellent and so easy to make but I agree with the others the balsamic (even using great quality stuff wasn't really a noticeable taste. I would use a little more next time and see how it turns out.

    The ganache was way too wet - either too much cream, or not enough chocolate. The only way to get these to set up after rolling them in cocoa (or in my case, finely chopped pecans is to leave them in the refrigerator. And while I do like dark chocolate, these could have benefitted from a little sugar. I won't be making them again.

    they tasted ok, it was sort of a hassle to make and it was messy, i would not recommed making these. just stick to buying truffles from the store (although they're expencive
