these truffles melt when out of the refrigerator too long. The flavor is wonderful but I wanted a truffle that was stable at room temperature. Would I make these again? I would have to try to adjust the ingredients to make it work better. I could thin the melted chocolate more and use it as a sauce over ice cream.

Getting the right temperature and consistency to make the truffle balls was hard. I wished I had made these a couple of days ahead and had more time to get them looking right and a better consistency.
The flavor was incredible! My only suggestion is to leave yourself plenty of time to make these to get the result you want.
That being said, I would DEFINETLY make again!
By desserts rule!

A crowd pleaser...As I began to mold the chocolate, I noticed it began to melt so I placed them in the fridge for a minute and that helped. Also, I stored them in the fridge before I served them. The balsamic added a certain "kick" giving it a taste of liquor....very chocolately, so you can only enjoy 1 or 2 at a moment.

Quick and easy for sure. Just couldn't add the balsamic vinegar (eww. And the cocoa powder is super bitter. I'd suggest rolling them around in chopped nuts or chocolate.

I like the taste of the chocolate;however, I left the chocolate out for 1 hour and it was already too warm to form into balls. Also, I decided to leave the cocoa powder off- I thought they tasted awful with it on.

I loved the outcome of the recipe as for taste as for easiness i found it hard to make them into balls with out the chocolate melting on my hands however i did find a solution that worked well for me i kept the mixture cooler for longer and i used a glove to stop it from melting.. maybe i am just to warm. I did also try it with a dark peppermint chocolate as well and it was a great change on this to make it a little more festive for the Christmas season. Everyone who tries them thinks that they are sooooo good and i would have to agree thanks Giada you make good treats.

These were pretty easy to make and very gourmet tasty. Next time I might add a little sugar to the cocoa powder.

I made these as a new holiday goody this year, and they were loved by everyone (except my vegan brother. They were very easy to make, present well, and taste wonderful. Be advised that they are quite rich!
