    I had five Banana's so I used them all, super moist! And I added some, brown sugar and Cinnamon to the top instead of frosting. AMAZING :

    I am a huge fan of banana anything! So when I made these for the first time, I was amazed at how good they were. The second time I made them, I added a pint of fresh blueberries and they tasted better than ever. My husband and sister said they were absolutely the best muffins they ever ate. And I haven't even frosted them yet. Guess that will be for a third or fourth batch. I also sprayed my tins with Crisco to eliminate the paper. They baked up better and bigger. Thanks for a great recipe.

    I thought that these were the best muffins I have every made - and very easy. The frosting was delicious - I used agave nectar in place of honey since it was all that I had. I'll definitely be making these again!

    This was the first time i made the banana muffins and it turned out great !!!!! It surprised me that my sister who hates nutmeg actually loved the muffins .
    I changed the icing and insted of 1/3 cup mascarpone cheese i just added a nother 1/3 cup of cream cheese pluse i added 1 Tbs. of sugar I t turned out great . For the muffins i changed the recipie a little too i used 5 bananas and insted of vegetable oil i used sunflower oil it turned out great !!!!!!!!!!!! I WILL MAKE THE BANANA MUFFINS AGIN IT WAS THAT GOOD!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

    The first time I made these, my wife said they were the best banana muffins she had ever tasted. She also assured my she wasn't saying that just because I made them. These are so easy and so tasty.
    For a nice switch, I threw in 3/4 of a cup of semi sweet chocolate chips instead of putting the marscapone frosting on top. It adds a nice sweetness to it and still cooks up great.
    My kids LOVE these muffins!!

    My sister got a cupcake making kit for her birthday which is really sorta mine since she's only 4 and I love to cook and bake, so anyway, thought I'd try this recipe since I love cupcakes and I LUUUV banana. So put the two together and bam! delicious! They were super moist and flavorful and perfect to eat for breakfast. I used whole wheat flour and only one cup of sugar plus a little extra honey to turn it into a healthy yet still delicious batch of cupcakes/muffins. And they were the perfect sweetness even with just 1 cup of sugar. They would have been too sweet for me if I had used 2 cups. They really didnt even need the frosting either. I'm definitely making these again when our bananas get over ripe.

    My dad had given me this recipe in 2009 and 1 muffin to try, I was hooked until I saw what was in them, something called Mascarpone cream cheese, I was like what in the world is that?!
    So I finally made them, July 21, 2010 I found the cream cheese and made them, they turned out great, but if anyone has a MINI muffin tin like I did they make way more than 24 muffins!! I would also agree need more walnuts!!
    I see no place to add pictures on food network web site, so Maybe next time I'll have a link to where I posted my food blog
    FOR MORE PICS OF THIS FOOD!! MMM good

    I made these muffins and substituted applesauce for the oil and put sugar on top of the muffins before I baked them. They turned out great. They did not need to be iced. Mu husband said they were the best yet. They do make 18 muffins but they are really big muffins! Ummm!

    These cupcakes (muffins were very good. Having only two bananas, I halved the recipe and got 24 mini muffins and 5 regular-sized muffins out of it. The mini ones actually came out better as I may have cooked the larger ones slightly too long. They were very tasty and well-received.

    The frosting, on the other hand, didn't go well. It clumped up to the texture of spoiled yogurt and tasted overly buttery. My husband said he couldn't get rid of the butter aftertaste all day. We ended up not frosting most of the cupcakes and just throwing the frosting out.

    I thought that the recipe I had was "it"! And I came across this one. My "picky teenagers" love them. I used 1&1/2 cups of whole wheat flour and 1&1/2 cups of unbleached all purpose flour, and I sprinkled some sugar on half of the muffins before I put them in, my son is not a fan of frosting. And the fact that I get 24 out of them is even better!! Well...good bye old recipe!! Thanks Giada ;-
