    This recipe is absolutely perfect. Best when the bananas are super ripe (brown skins. I usually just make half-batches, which makes 11 muffins (that's a lot for my household!. When I do the half-batch I use two eggs (since 1.5 is kinda difficult to do. Also I like to add a tiny, tiny bit of cloves with the other spices. Don't bother trying to cut corners with less oil- it makes the muffins to dry.

    Really whip the frosting and if you are feeling unrestrained decandence double the frosting recipe. These are so good!

    These are the best banana muffins. I've made many different banana muffins and cakes and could not find one that was moist, they are all so dry. Well this one is moist and delicious.The frosting is wonderful. I really like the honey in it.

    I had some ripe bananas so I made these this morning for breakfast. I used 1/2 whole wheat flour and substitued Splenda for 1/2 of the sugar. I skipped the frosting altogether since I didn't have the ingredients on hand. These were just delicious - moist, sweet, and light. I don't know how she does it - just takes something plain like a banana muffin and makes it taste like something special.

    I made these w/o the frosting, an added blueberries. The baking time took a bit longer than 25 minutes and the muffins were really too sweet. Next time I would try 3/4 of what the recipe calls for with the sugar. However they were simple and delicious!

    I have never tasted such a tasty banana muffin. It is so moist and packed full of flavor. Unlike other banana muffins I have eaten where you get a hint of banana taste, with Giada's recipe you know it's banana. The Mascarpone Cream Frosting is perfect with it...very unique taste with the honey and mascarpone. Giada is a delight to watch every day. Her enthusiasm is contagious.

    I always read reviews on a recipe before I try it. This recipe had excellent reviews and it turned out to be a very good choice to make. Putting toasted walnuts on the batter before baking kicked it up a notch. I put that delicious frosting on half of the muffins and served the other half plain. I gave some to my girlfriend and her husband. Her husband is quite an honest critic and he liked them so well that he asked her to get the recipe. He preferred the frosted muffins. As other reviews stated, it's a good idea to spray the top of the muffin pans because the muffins do spread.
    Next time I'll make them with my grandkids.

    These are some of the best banana muffins I've ever made. They are so light! I will use this muffin recipe for my banana nut muffins fromnow on, with and without the frosting.
