This is also a FABULOUS banana cake recipe. I used the exact recipe but cut the sugar to 1 1/3 c. (Yes, 1/ 1/3 cups and it was PLENTY sweet. I did have extremely ripe, aka sweet - bananas, but 2 c. of sugar is way too much, even for the cupcakes.(Trust me, I'm an experienced baker - especially if you ice the cupcakes or cake. I put the batter into two greased and floured layer cake pans. Watch the time carefully - I'm not sure exactly how long I cooked them, but as soon as a toothpick went in the center without wetness, I took them out. DO NOT OVERCOOK THESE! I iced the cake with cream cheese frosting, with toasted walnuts btwn the layers and on the top. I'm sure the added marscapone would be delicious, I just didn't have any.

This recipe was really easy and very, very good. I was afraid it wouldn't be moist enough but it was a perfect consistency. I lessened the nutmeg since I didn't want to overpower the taste and I'm sure you could omit if you prefer. Note on the frosting, I didn't think it was enough in the middle of making it so added more cream cheese and marscapone on the fly and it was just enough to frost all my cupcakes. I used 5 overripe bananas and yielded 22 cupcakes.

This is the "BEST" banana recipe I have ever tasted. The crowning glory is the Frosting. I exchanged powdered sugar for the honey, and added a little extra vanilla. Everyone who has tasted these said they are the best "cupcake" they have ever had. I have made them 3 times, and each time they taste even better. I also sprinkle finely chopped walnuts on top of the light and fluffy cream cheese topping. Unbelievably delicious! Nancy in Virginia

This is by far my favorite banana muffin recipe! I make them all the time for my family, to bring to potlucks or parties, and to give as gifts. I love the moist texture of Giada's muffins, and the banana flavor is amazing - not at all bland like some of the other recipes I've tried. It's definitely a sweet muffin, though, so if you're looking for something more along the lines of a breakfast muffin, you might want to cut down the amount of sugar and even substitute wheat germ or oats for some of the flour. I happen to love the sweetness of these; I've never bothered to frost them, but I do occasionally add semi-sweet chocolate chips for a little extra decadence. Thanks, Giada!

This might be the best banana muffin recipe I've made - and I make them a LOT! I skipped the frosting (although it does sound yummy. These muffins are sweet enough on their own. The only substitutions I made was 1 cup of honey in place of one of the cups of sugar, a splash of vanilla, and because I only had 3 bananas, I added a cup of applesauce. I did find the batter to be a bit too thick, so I added a little milk till it was the right consistency, but by far the yummiest muffins! I also pretty much always add 1/2 C to 3/4 C organic wheat bran for added fiber anytime I make muffins. YUM!

Other than using half white and half brown sugar... Unless you add more Banana for banana fans, Do NOT Change ANYTHING!!!!! Perfection at its best! OMG, SOOOOO GOOD!!!!! Even my 10 year old (picky son said "I could Live on these things"!!! This is EXACTLY what I did (mini muffins baked 10 min. and added the frosting... We are ALL licking our fingers saying "I'm in heaven" !! Super AMAZING!! I read ALL of the comments and wasn't sure what to think... goes to show. it differs depending on taste buds! If the frosting seems to buttery, use a little less butter, but try it at least once!!!!!! The muffins themselves are moist and PERFECT!! ~P.S.~ I bake and cook A LOT! Cannot rave about these enough... I wish it were my recipe!!!

Great Banana recipe. I made this on Sunday because I had some bananas that were ready to go bad. It was easy and they are delicious.
