very tasty! I will definitely make it again with 2 changes to the recipe: do not add the squash immediately, wait maybe 15 minutes as it came out a little mushy and began to fall apart (this, however, did not affect the taste. Also either add less broth than you think you need or, as I did, I thickened the broth at the very end with a little cornstarch and water paste.

Sooo Delicious. This was fantastic! I made half the recipe but used the entire recipe amount of squash. The squash melts into the stew.

I am not a cook. Had out-of-town friends arriving on a very cold, snow day. This was the perfect dish and it was delicious. The aroma alone was lovely, but we all raved about the flavor. It was just as great leftover. I did use dried rosemary, but next time I will try the fresh although how it could get better I dont know.

I made a half portion for me and my hubby and accidentally put in a whole portion of both the butternut squash and the sundried tomatoes but it was still tasty and hearty. I didnt have any beef broth on hand so I subbed it with chicken broth instead. since it was a one pot dish clean up was super easy and letting it simmer for an hour let me do other things around the house.

OMG! This was soooooo delicious. Giada never disappoints. Her recipes are not that difficult and they are always better than good. I can always depend on her for a crowd pleaser. Keep up the good work Giada.

This is a truly delicious stew and I have made it several times even tho I am not a Butternut Squash lover. In the stew it is great and so are the sundried tomatoes. Time to make it again.....

This is one of the best beef stews I've ever had. It's one of those irresistible salty-sweet things that you just can't get enough of! The individual flavors play on the palate nicely and make for a perfect autumn recipe to warm you up!

Simply the best beef stew i ever made. The only change I made was to blend in sone mashed squash. It thickened the stew an added a depth of flavor.
