    Very good. I threw a couple of cups of kale in with about 5 minutes to go and it made a great addition.

    I thought the fresh rosemary and thyme was too strong. Next time I'm going to cut in half. Excellent recipe. I also simmered the beef slowly as suggested in other reviews before adding the butternut squash.

    Absolutely delicious and perfect for autumn. I added carrots and would have liked to add some golden raisins, and omitted the sun-dried tomatoes. I think next time I'll puree the squash and carrots in the beef stock, then add it all into the crock pot. I also added some squash towards the end of the cooking so that it wasn't mushy and it had a great texture.

    I absolutely loved this stew. I used almost 2 lbs of squash and added carrots and an extra 2 cups of broth and only 3/4 cup of marsala. After browning the meat I put it in my crock pot with the other ingredients (i only put in 1/2 of the squash at that point I put it on high for 4 hours. About 20 minutes before serving I took some of the broth and the rest of the squash, and carrots and simmered them until just soft. This made the broth thicker from the softer squash but it still had the chunks of the firmer squash /carrots and the beef was really tender and delicious. My 2 kids ate a lot of this and it was loaded with vegetables. Both of them usually HATE squash but they loved this.

    I made this Stew today for my husband and I.
    This is the best stew that I ever made with a few modifications.
    I took the advise from a prior reader, after browing the meat,
    I cooked the Stew in my crockpot for 5 hours.
    We could not get enough,this will replace my regular Stew recipie.
    Thanks for sharing such a wonderful recipie

    Made this last night for a big family dinner and it was a big hit. Used 3/4 dry marsala and 1/4 sherry that we had and wanted to finish up. Really good flavor. Only thing is I doubled due to # of people and not sure if I should have doubled the broth. Sauce/broth was very thin, so I ended up cooking longer and reducing it down some. Still, it was really good and will definitely make again. Next time will probably add carrots though.

    When we can't make it to our local farmer's market, my philosophy in the grocery store is "buy what looks good and figure out what to do with it later"....well that's how I ended up with a beautiful butternut squash and no idea what to do with it. I've cooked with summer squash before, but never butternut, and although the numerous risotto recipes looked fabulous, I wanted something different. This recipe will probably replace my mother's old tried-and-true beef stew! The only change I made was to replace the marsala with sherry (that's what I had on hand and I don't really care for marsala anyway - too sweet and often salty and it was outstanding with a nice hunk of homemade oat bread. My husband and I are still eating the leftovers and can't believe how fabulous it turned out. The recipe is easy to follow, the proportions are good and it was super simple to make - will DEFINITELY be making this one again!

    This is such a fantastic, hearty, delicious, filling, warming, AMAZING meal! I've made it several times and it always comes out wonderful. It warms you up from the inside out and is the perfect meal for a cold winters day. I love this recipe and wouldn't change a thing!
