Very good and I put cooked rice instead of beans as I don't like beans. Every thing else the same and it's great! Good as a light meal by itself.

This recipe is excellent as-is. A couple of adjustments that my husband and I also enjoy: adding 1 teaspoon of Italian seasoning and a zucchini (quartered lengthwise and sliced at the stage where you add the bay leaf. Also, I like to add 1/2 cup fresh-grated Parmesan with the beef and garlic. It absorbs as the beef cooks. Later, I still add grated Parmesan to serve. The soup is so easy and delicious, it is starting to become a regular meal at our house.

I thought this was Great. Have made it a few times now and I have learned a few things about it too. First it is great with any meat, last time i threw in left over ham. Thats the way I will have it from now on. I also put in a wee bit of pasta. Thanks it is a must cook recipe.

I've been making this on a regular basis for a couple of years now. When I went vegetarian last year, I substituted vegetable broth for the beef broth and TVP crumbles for the beef. Still every bit as yummy! Thank you for creating this dish which has become a staple for hubby and me. :

absolutely wonderful recipe, quick,easy and wipes together easily on a week night, or it's good enough for that yummy weekend meal, i also used ground turkey and it still tasted fantastic!

Even better the next day! I added Swiss chard and a parm rind, otherwise followed the ingredients per recipe. Found it to be very flavorful and hearty. One of my new favorites, can't wait to make it for family and friends.
