I added Worcesershire Sauce, mushrooms & a small amount of red wine. It is very good & very easy. I am thrilled to have this healthy soup recipe.

This recipe is a good start. As I am a big soup maker, I knew that it would be sorta bland so I changed the ground beef for JD sausage (which always adds a good flavor, added some green beans, some crushed red pepper and Italian seasoning. Will be making it again!!

My 2 1/2 year old son loves soup and he couldn't get enough of this! I did add a couple handfuls of ditalini pasta, about a tsp of Italian herbs and I hand crushed San Marzano's and it was awesome!

Made it last night and doubled the batch for a family of 6. Easy on the budget!
Cannelini beans are white kidney beans, so I'm thinking I could have used the red ones I had in the pantry if I'd wanted to. The only thing I added was a parmesean rind I had on hand and it added a nice richness to the broth.
The second day for lunch is was amazing! Mmmm...going for my second cup now! ;D

I only made a few modifications. My wife doesn't like beef, so I used an entire pound of ground chicken and chicken broth. I also added some basil and a few handfuls of campanelle pasta towards the end. Everybody liked the finished product. It was hearty and nicely seasoned. I think most minestrone recipes have too much oregano, etc., so this was a nice change. Best of all, it was very easy and most ingredients are already in your pantry!

My husband and I decided that this is a keeper! I pulled some of the veggies out and ran them trough the food processor to make it a little bit thicker. The flavors are excellent!

Excellent soup! I doubled the recipe so I could freeze some. I followed the recipe but did use the entire can of tomato paste, only because I didn't want to waste it. I prepped all my vegetables ahead and let the soup simmer uncovered one hour. I sprinkled grated Romano on top. My husband said it was excellent, and he is my taste tester.
