This was so hearty and tasty! I used mild Italian sausage, casings removed, rather than ground beef. I also subbed chicken broth. Added some red pepper flakes and took another reviews advice and added 3 small sliced zucchini--at the very end, just to heat it, because I hate when it gets soggy and dull in color. I thought one can of beans was a little sparse, so I added a second I slightly pulvarized the carrots and onion in my food processor (oops but I actually really like how that thickened my broth. Really recommend subbing Italian sausages. Adds so much flavor. Makes a lot with the extra beans and zucchini. *EDIT* I once made this with 5. Count them 5 ingredients and it was amazing! Italian sausage, canned tomatoes, canned white beans, chicken broth and zucchini. Probably was the sausage but still. FIVE ingredients. Cant beat that.

Very good, although I'll use kitchen ready tomatoes rather than diced. Will certainly make it again! Yum!

Very easy to throw together. Most minestrones have more veggies so I added some chopped zucchini. Also added a spoonful of beef demi-glace to give the broth more flavor. I'll cut back on the dice tomatoes though. Next time I'll try this with ground chicken and chicken broth for a healthier version.

FABULOUS! My entire family loves this meal. I also throw in any fresh veggies I have that need to be used. Today, I added red bell pepper & yellow squash. Yummy!

Absolutely love this soup. I've made it at least 5 times in the last 2 months. Its such a hit! I did add a squeeze or so of lemon juice and threw in some dried dill for flavor.
i pair it with crusty garlic bread and you have a hot hearty dinner for cold fall/winter nights :
